- Movin' on up! - Well, the remodel is finally done and we moved upstairs

insulin resistance, in obese people," said researcher Joan Claria from the University
of Barcelona. Previous studies have implicated omega-3 in protective benefits
against both obesity and diabetes, and the new study adds to this small but
growing body of evidence. A considerable number of studies already support the
benefits of the omega-3 fatty acids eicosapentaenoic acid (EPA, C20:5 n-3) and
docosahexaenoic acid (DHA, C22:6 n-3) for cardiovascular health, and cognitive
health. Other areas of potential for the fatty acids include mood and behaviour, eye
health, cancer risk reduction, and improved infant development.
- Georgia bans GMOs - Georgia will be declared to be a GM-free country, Georgia’s
President Mikhail Saakashvili has recently announced on local television. Mikhail
Saakashvili has participated in the live broadcast "The Georgian president talks to
the people", in which the people of Georgia were able to ask the President some
questions, reports RIA Novosti. "Georgia does not have a major agricultural
production. We hope that our production is ecologically pure and healthy. I will
instruct the Government to ensure that genetically modified products are prohibited
in Georgia as in some countries in Eastern Europe and within the CIS," Mr.
Saakashvili has said.
- Ignorance over diet cancer risk - Four out of 10 people are unaware eating a
poor diet increases the risk of cancer, a new study suggests. The poll of almost
2,000 people found 41% were unaware of the link between their diet and the
disease. And only one in three people knew processed meat increased cancer risks,
while 44% did not know being overweight was another risk factor.
- 'Alien' genes escape into wild corn - NOW it's official: genes from genetically
modified corn have escaped into wild varieties in rural Mexico. A new study resolves
a long-running controversy over the spread of GM genes and suggests that
detecting such escapes may be tougher than previously thought. "They are out
there, but it's hit-and-miss," says Paul Gepts of the University of California, Davis, a
co-author of the new study. The escaped transgenes are common in a few fields
and absent in others, he says, so gene-monitoring efforts must sample as broadly

every sample containing transgenes. Monitors should use many methods to avoid
false negatives, says Gepts. Meanwhile, the EU is considering banning Monsanto

- Vitamins may help celiac disease management - Daily supplements of B
vitamins may improve the overall health of people with celiac disease by reducing
levels of an amino acid linked to heart disease, says a new Dutch study. A study
with 51 adults with celiac disease and 50 healthy controls found that people taking
daily supplements of vitamin B6, folate, and vitamin B12 had significantly lower
levels of the amino acid homocysteine, according to findings published in the World
Journal of Gastroenterology.
- Broccoli may help protect against respiratory conditions like asthma - Here's
another reason to eat your broccoli: UCLA researchers report that a naturally
occurring compound found in broccoli and other cruciferous vegetables may help
protect against respiratory inflammation that causes conditions like asthma, allergic
rhinitis and chronic obstructive pulmonary disease. Published in the March edition of
the journal Clinical Immunology, the research shows that sulforaphane, a chemical in
broccoli, triggers an increase of antioxidant enzymes in the human airway that
offers protection against the onslaught of free radicals that we breathe in every day
in polluted air, pollen, diesel exhaust and tobacco smoke.
- Crop Scientists Say Biotechnology Seed Companies Are Thwarting Research
- Biotechnology companies are keeping university scientists from fully researching
the effectiveness and environmental impact of the industry’s genetically modified
crops, according to an unusual complaint issued by a group of those scientists. “No
truly independent research can be legally conducted on many critical questions,” the
scientists wrote in a statement submitted to the Environmental Protection Agency.
The E.P.A. is seeking public comments for scientific meetings it will hold next week
on biotech crops. The statement will probably give support to critics of biotech
crops, like environmental groups, who have long complained that the crops have
not been studied thoroughly enough and could have unintended health and
environmental consequences.
- Fighting Obesity and Illness at the Source - Omega-3 fats are thought to play
an important role in reducing the risk of heart disease, stroke, cancer, obesity and
other serious diseases. However, humans are unable to synthesize omega-3 for
themselves and must obtain it from meat, fish and dairy products. Studies have
indicated that animal feeds enriched with omega-3 improves the health and fertility
of animals, and the nutritional quality of their meat and dairy products. Obese
volunteers eating a diet comprising meat and dairy products derived from animals
fed with omega-3-enriched linseed (flaxseed) lost 3 kg in three months, and
sustained the weight loss five months later. [Grass-fed animals also have superior

- Nordic Diet Healthy as Mediterranean - The heart-healthy Mediterranean diet rich
in olive oil and sun-ripened fruits and vegetables may be replaced by the Nordic diet.
Scientists have found that the Nordic diet, which is rich in rapeseed oil, elk and
cowberries, may be significantly healthier than the traditional Mediterranean diet and
much more suited to being produced in Northern climates. People living in countries
surrounding the Mediterranean eat large amounts of vegetables, nuts, fish and
bread. This diet, which is low in saturated fats, lowers the risk of cardiovascular
disease, some cancers, and obesity. Other cultures have adopted the diet to
combat growing problems with obesity and cardiovascular disease, but many people
who live in more Northern climates have difficulty sticking with it. New research has
shown that foods native to colder climates, such as blueberries, cowberries, and
cloudberries, are loaded with heart-healthy omega-3 fatty acids. The berries are
also rich in antioxidants, which fight heart disease and cancer. Cold-weather
vegetables such as cabbage, Brussels sprouts and kale contain high amounts of
antioxidants. Traditional Nordic diets feature fish such as salmon, cod, and herring,
which are also high in omega-3 fatty acids. Scientists at the University of
Copenhagen in Denmark are developing the new Nordic diet, which they hope will
give those who live in Northern climates a healthy diet suited to their geographic
surroundings. “The plan is to develop a counterpart to the Mediterranean diet that
is superior in terms of health effects and palatability,” said professor Arne Astrup,
president of the International Association for the Study of Obesity and head of the
department of human nutrition at Copenhagen University. Astrup believes the new
diet will help fight the battle of the bulge that so many countries are losing. The key
to losing weight and keeping it off, he believes, is a high-protein Atkins-like diet.
Professor Astrup studied 250 dieters and found that while many diets help people
lose weight initially, they usually put the weight back on. But high-protein diets
helped dieters keep the pounds off. Astrup also believes that game meat, such as
elk, should be chosen over farm-reared animals. “There is increasing evidence that
the fat in meat is not as unhealthy as we are led to believe,” he said.
- GPs are medicalising healthy elderly people, professor warns - Elderly people
are being turned into patients by GPs blindly following guidelines to hand out pills
for high blood pressure and cholesterol, a professor has said. The ‘paternalistic
society’ and medicine by ‘tick box’ has overtaken personal advice, Michael Oliver,
emeritus professor of cardiology at Edinburgh University wrote in the British Medical
Journal online. He said many of the drugs including those for high blood pressure
and statins for raised cholesterol have side effects which many elderly people find
debilitating.
- Countryside No Longer Synonymous with Healthy Living - Once a serene
refuge from urban pollution and chaos, the Argentine countryside has now become
a place fraught with risks for many local residents. The massive use of pesticides on
fields of soy, the country’s top export, is creating a "health catastrophe" in the rural
sector, environmentalists warn. A report by the Rural Reflection Group (GRR), a
local environmental organisation, points to an increase in health problems in the
countryside, such as cases of cancer at early ages, birth defects, lupus, kidney
problems, respiratory ailments and dermatitis, based on the accounts of rural
doctors, experts and the residents of dozens of farming towns. The GRR has been
carrying out a campaign since 2006 to identify towns affected by the spraying of
glyphosate, the herbicide tolerated by the genetically modified (GM) soybeans
planted in Argentina, which kills all plants other than the crop itself.
Point to Ponder #1 - The Hidden Dangers of Roundup

Roundup is the world`s most popular herbicide used to control weeds all over the
planet and is omnipresent in the food chain of animals and humans. Roundup is
claimed to have an active ingredient known as glyphosate (G) and said to be safe for
humans even though plants are readily killed. In a first of its kind published study,
French researchers recently sought to examine the toxicity of four popular G-based
herbicide formulations on human placental cells, kidney cells, embryonic cells and
neonate umbilical cord cells and surprisingly found total cell death of each of these
cells within 24 hours.
As the percentage of genetically modified (GM) soy in the US burgeons to over 91
percent [1], researchers are beginning to publish harbingers for the potential of a
maelstrom of future health problems from GMOs (genetically modified organisms) [2,
3]. One of the potential harmful triggers includes the increased amounts of chemicals
present in the environment disseminating at an alarming rate with few researchers
examining the combined effects of these xenobiotics on plants, animals or humans.
Similarly, much of the existing research on GMOs has been undertaken on the
individual organism itself and neglects to examine the more important ecological issue
of synergism. This point is very notable because the world`s most popular herbicide
known as Monsanto`s Roundup contains a blend of glyphosate (G) and several
unknown adjuvants. The exact ingredients in Roundup are not disclosed to the
general public and are kept confidential as they are labeled, "trade secrets". Monsanto
assures the public these ingredients are inert and are therefore non-toxic. The most
predominant adjuvant in Roundup seems to be polyethoxylated tallowamine or POEA
[4, 5], which has been implicated in ocular burns, redness, swelling, blisters, nausea
and diarhhea [6]. POEA is one of the most prevalent pollutants found in rivers all over
the world. Problems begin to arise when G alone interacts with POEA and other
unknown ingredients activating and accelerating the resultant mixture known as
Roundup [7].
Monsanto patented its G propriety blend and named it Roundup in the 1970`s to kill
broadleaf and cereal leave weeds. G is the active ingredient utilized in nearly 75% of all
edible GM plants that have been engineered to tolerate high levels of this form of G
[8]. G works by inhibiting an enzyme that synthesizes the amino acids tyrosine,
tryptophan and phenylalanine thereby killing the weed. Researchers examining the
amounts of herbicide used on GMO soy have concluded that the GMO soy typically
receives several more pounds of G than conventionally grown soy per acre [9].
Furthermore, researchers have found that several types of newly created superweeds
resistant to Roundup (e.g., pigweed, ryegrass and marestail) have been rapidly
surfacing leading to increased amounts of Roundup on such crops [10]. These
farmers have been told to use increasingly potent mixtures of herbicides and not
Roundup alone [11]. In fact, there has been a more than 1900% increase in G use on
Roundup Ready soybeans from 1994 to 2006 [12].
For the first time, French researchers recently sought to examine the toxicity of four
G-based herbicide formulations on human placental cells, kidney cells, embryonic cells
and neonate umbilical cord cells [13]. The researchers used the four most common
types of Roundup utilized worldwide: Roundup Express, Roundup Bioforce, Roundup
Grand Travaux and Roundup Grand Travaux Plus at lower concentration levels than
would be normally found in plants and in animal feed. The researchers sought to
determine the levels of necrosis (death of cells due to injury, disease or loss of blood
supply) and apotosis (programmed cell death) of each of these cells based on
exposure to various dilutions of each of the four Roundup products as well as G,
POEA and AMPA (the main metabolite of G at 14 different concentrations of 10 ppm to
2%).
The researchers were surprised by the findings and reported that all four herbicides
caused cellular death for all four types of cells within 24 hours. The researchers
reported several mechanisms by which the herbicides caused the cells to die including:
cell membrane rupture and damage, mitochondrial damage and cell asphyxia. Following
these findings, the researchers tested G, AMPA and POEA by themselves and
concluded that, "It is very clear that if G, POEA, or AMPA has a small toxic effect on
embryonic cells alone at low levels, the combination of two of them at the same final
concentration is significantly deleterious".
Although Monsanto claims that G metabolizes into a harmless and inert substance
known as AMPA, the researchers found that AMPA was more toxic to human cells than
G. This finding is very noteworthy considering AMPA is more stable and present in
soil, plants, food and wastewater (2 to 35 ppm) compared with G (.1 to 3 ppm) [14].
AMPA was also found to synergistically increase the toxicity of G and POEA.
The researchers also reported that G acted very quickly at concentrations 500 to
1000 times lower than present agricultural levels to induce programmed cell death. G
alone was found to induce mitochondrial toxicity without cell membrane damage.
Furthermore, the researchers tested very weak concentrations (.005%) of Roundup
and reported cell death, lack of adhesion, shrinking and fragmentation in the cells
undergoing apoptosis. The embryonic cells were the most sensitive indicating another
major reason to eat only organic foods while pregnant.
Although previous researchers have proposed that the supposed "inert ingredients"
alter the role of cell membrane disruptors in fish, amphibians, microorganisms [15]
and plants [16], independent of G, this study is the first of its kind to report similar
findings in human cells and immediately calls for strict monitoring of the agricultural
usage of Roundup. The researchers concluded that, "the proprietary mixtures
available on the market could cause cell damage and even death around residual levels
to be expected, especially in food and feed derived from R [Roundup] formulation-
treated crops".

While you are working to adopt a healthier lifestyle I would recommend a basic regime

Marketing departments like to invent terms that sound good but mean anything --
non-enforceable claims don’t result in lawsuits. Here’s an overview of what labels on
the meat you buy actually mean:
- All Natural: This means meat that is minimally processed with no artificial or
synthetic products. It is not regulated, however, so anyone can put it on their
package. It is a claim with no clout.
- Cool (Country of Origin Labeling): A USDA regulated label stating where
meat was raised, slaughtered, and processed.
- Grass Fed: A USDA regulated label meaning, very narrowly, that animals ate
grass. According to the USDA definition, “grass-fed” animals can also be fed
grain, and can be raised on grass in confinement, as long as they have access to
pasture -- although "access" can be, and often is, nothing more than a facility
with a door to a small outdoor area.
- Free Range: This means only that the animal has some access to the
outdoors. There is no regulation for use of this term, except in the case of
chickens raised for consumption. “Pasture-raised” is a more meaningful term.
- Organic: This label is USDA and third-party certified. It means that livestock
wasn’t treated with hormones or antibiotics and was fed a pesticide-free diet.
- Vegetarian Fed: This refers only to an animal’s diet and does not guarantee
the animal was pastured or raised humanely.
- Air Chilled: This refers to the treatment of living animals. Producers and
retailers may also make claims about how the animal is handled between
slaughter and purchase. Meat may be wet or dry-aged, frozen, and packaged in
various ways.
- Humanely Raised/Certified Humane: Many ranches now choose to undergo
an audit by third parties such as Animal Welfare Association and Humane
Farmed to highlight their extra care. This type of label states that no practices
such as overcrowding, castrating, early weaning, or denying animals access to
pasture used.
- Biodynamic: This pre-organic standard treats the whole ranching operation as
an interrelated whole. While some meats are technically organic, a biodynamic
farm assures the meat also came from a healthy, self-sustaining system.
- Local: Producers who take part in this affidavit program state in writing that
the animals were raised within 20 miles. This label is not certified or confirmed by
a third party.
Dr. Mercola's Comments:
The numerous labels that do little but confuse consumers about the essentials of
what they’re buying are aggravating to say the least.
Fortunately, it is possible to find what you’re looking for. I’d like to expand on the
“grass-fed” label mentioned above, and point out your very best option when it
comes to buying wholesome grass-fed beef and other meats.
The USDA Grass-Fed Label
As of November 15, 2007, the USDA enacted new standards for the grass-fed label.
According to this new USDA marketing claim standard:
- Grass and forage shall be the feed source consumed for the lifetime of the
ruminant animal, with the exception of milk consumed prior to weaning.
- The diet shall be derived solely from forage consisting of grass (annual and
perennial), forbs (e.g., legumes, Brassica), browse, or cereal grain crops in the
vegetative (pre-grain) state.
- Animals cannot be fed grain or grain byproducts and must have continuous
access to pasture during the growing season.
- Hay, haylage, baleage, silage, crop residue without grain, and other roughage
sources may also be included as acceptable feed sources.
- Routine mineral and vitamin supplementation may also be included in the feeding
regimen. If incidental supplementation occurs due to inadvertent exposure to
non-forage feedstuffs or to ensure the animal’s well being at all times during
adverse environmental or physical conditions, the producer must fully document
(e.g., receipts, ingredients, and tear tags) the supplementation that occurs
including the amount, the frequency, and the supplements provided.
Sounds good! In order to carry the “grass-fed” label, the animal must have foraged
on nothing but grass for its entire lifetime.
But there’s a twist, and a few other issues you may not have thought of.
These standards are voluntary, so in order for you to determine whether or not this
standard is actually being met, in addition to the “grass-fed” label, the meat you buy
would also need to carry the “USDA Process Verified” label.
There’s another slight problem with this standard. As pointed out by the American
Grassfed Association, the definition of "growing season" means that animals could be
confined for long periods, and can be kept off of pasture even when there is grass
growing.
The new rules also do not restrict the use of antibiotics and hormones in the animals.
So although it aimed higher than any standards we had before, even the USDA grass-
fed labels won’t offer you all the assurances you’d expect from truly organic, grass-
fed beef.
Another issue frequently overlooked is that of cost to the farmer.
The USDA regulatory system has a tendency to favor big business, which can easily
afford the USDA’s costly certification fees. Small farmers, who are often raising food
in traditional, healthy ways, then are not able to legally call their products “USDA
grass-fed” because they haven’t paid the USDA for that privilege.
Why All the Fuss About Grass-Fed Meat?
Grass-fed beef is vastly superior to grain-fed beef, and in fact it’s the clear beef of
choice you should be eating. It is far more important to choose grass-fed than to
choose organic, as most grass-fed beef are also organic.
Not only is it raised in a more sustainable way for the environment, and a more
humane way for the animal, but it’s the superior choice for your health.
Grass-fed beef, for instance, is lower in fat than regular beef and, more importantly,
contains higher amounts of conjugated linoleic acid (CLA), a fatty acid. Grass-fed
animals have from three to five times more CLA than grain-fed animals.

of health problems associated with eating beef. If you can find organic, grass-fed
meat, that would be ideal.
Your Best Bet When Looking for True Grass-Fed Meats
Remember, grass-fed meat doesn’t have to be “certified” grass-fed for it to give you
health benefits.
Your best bet, which circumvents the labeling confusion altogether, is to get in touch
with a local farmer (try finding a farmer’s market or community-supported agriculture
program in your area to do this) who can verify that the products are raised on
pasture, without antibiotics and pesticides.
By going straight to the source, you’re likely getting the absolute best meat there is,
USDA-certified or not.

Quinoa is one of the most impressive foods to hit the grocer's shelves in many years.
It is the live seed of a dark green leafy plant that has the taste, texture and versatility
of grain. Quinoa (pronounced keen wa) is both nutritious and delicious. It is the only
grain-like food that offers a complete protein, a feature that makes it a favorite with
those avoiding animal products. Quinoa has a delicate nutty flavor when cooked and
can be a nutrient packed substitution in many traditional recipes. Best of all, it is quick
and easy to prepare, requiring no more effort than cooking rice.
Quinoa was revered by the Incas
Quinoa was an important food in the Andean region of South America 6,000 years
ago. The Incas considered it a sacred food and referred to it as the mother seed and
gold of the Incas. During the European conquest of South America and the effort to
extinguish the Indian culture, quinoa fields were destroyed. Growing quinoa was made
illegal with punishment that included death. Quinoa came close to complete extinction.
In recent years two Americans with great business sense began cultivating the plant
in Colorado and its rebirth began. Quinoa is now a favorite wherever the health
minded shop.
Quinoa is a nutritional powerhouse
Quinoa is again regaining the place of nutritional importance it had during pre-
Columbian Andean diet. It is now appreciated for its high protein content which
ranges from 12 to 18 percent. One 3.5 ounce serving provides 14 grams of protein.
This is complete protein, containing all of the amino acids necessary for the
construction of proteins used by humans. Unlike other grains, quinoa has an ample
supply of lysine. Quinoa is an excellent source of dietary fiber, containing both soluble
and non-soluble fiber. It is high in a variety of vitamins and minerals, especially
manganese, magnesium, iron, copper, and phosphorus. It is gluten-free and easy to
digest. Quinoa is very low on the glycemic index, meaning that it will not cause blood
sugar levels to spike, and it provides a sustained feeling of fullness.
In their natural state, quinoa seeds are covered with a coating of bitter-tasting
saponins that makes it unappealing to birds. There have been attempts to lower the
saponin content through selective breeding, but the new plants were rejected by
growers because birds devoured the entire crop after the first season.
Preparing quinoa is a snap
Boxed quinoa is usually found alongside pasta and other dried grain products. It has
been rinsed of saponins and is ready to prepare. Quinoa sold in bulk bins is usually
pre-rinsed. To make sure the saponins are gone, pour quinoa into a strainer and rinse
under running water. If a soapy film appears, the quinoa has not been pre-rinsed, so
rinse it until the soapiness disappears. If no soapy film appears, the product has been
pre-rinsed.
The basic cooking recipe for quinoa is the same as for rice. Two cups of water and one
cup of quinoa are brought to a strong boil, covered and slowly simmered for about 12
to 15 minutes. It is done when it looks translucent and the germ of the seed makes a
white ring around the outside of the grain. Quinoa should be served al dente, like
pasta. Vegetables and seasonings can be added to the cooking water for extra flavor.
Chicken or vegetable stock can be substituted for the water. Since most prepared
stock contains MSG, make it at home or buy prepared stock from health minded
grocers. Even then, read the box because several of their brands contain MSG.
Prepared quinoa can be kept in a tightly closed glass jar in the refrigerator for a week,
and added to dishes as ideas strike. It makes a super nutritious replacement for rice,
couscous, and pasta. It can be added to soups, salads, pilafs, vegetable dishes, and
veggie burgers or veggie meatloaves.
Quinoa is popular as a high protein breakfast food that starts the day with a bang. It
can be mixed with honey, nuts or fruit. Prepared cereal foods made with quinoa are
available at health conscious grocers. These grocers also carry dried pasta and noodle
products made of quinoa.
Flour made from quinoa is available to use in gluten-free baking. A recipe for a baking
mix featured on in Wikipedia is three parts quinoa flour, three parts sorghum flour,
two parts potato starch, and one part tapioca starch.
Sprouted quinoa offers the ultimate in nutrition
Raw quinoa can be sprouted to activate its natural enzymes and boost its vitamin
content. It only takes about 4 hours to sprout quinoa. Just place the grains in a glass
of clean water. After 4 hours the enzymes will be released. The sprouting process
softens the grains, making them suitable to be added directly to salads and other
foods without having to be cooked. Sprouted quinoa is best eaten in 2 to 3 days.
Quinoa has super impressive health credentials
Quinoa was called gold of the Incas because its high level of complete protein
increased the stamina of Inca warriors. Its mineral profile makes it valuable for anyone
with migraine headaches, and its low score on the glycemic index makes it ideal for
people with diabetes.
The substantial level of magnesium in quinoa relaxes blood vessels and decreases
hypertension and the risk of stroke. Eating quinoa slows the progression of
atherosclerosis, the build-up of plaque that narrows the vessels through which blood
flows, and lessens progression of stenosis, the narrowing of the diameter of arterial
passageways.
The high levels of manganese and copper in quinoa serve as cofactors for the
production of superoxide dismutase (SOD), one of the powerful antioxidants
produced by the body. SOD protects the mitochondria of the cells from free radical
damage.
Quinoa's high fiber content makes it protective of breast health. Researchers looked
at how much fiber participants in the UK Women's Cohort Study consumed. After
analyzing data from 35,972 women, they found that a diet rich in fiber from whole
grains such as quinoa offered significant protection for pre-menopausal women.
Women eating the most fiber, more than 30 grams daily, halved their risk of
developing breast cancer compared to women who ate the lowest amount. This study
was reported in the April, 2007 International Journal of Epidemiology.
There is an abundance of lignans in quinoa that are converted to mammalian lignans in
the intestinal tract. One of these is enterolactone, a lignan believed to be protective
against breast and other hormone-dependent cancers as well as heart disease.
Lignans act like weak estrogens in the body and fit into estrogen receptors in the
breast and other hormonally sensitive areas of the body. When lignans are locked into
receptors, excessive estrogen that results from hormone imbalance is not able to fill
those receptors and stimulate undesirable cell growth.
Eating grains such as quinoa can help reduce the incidence of wheezing and other
symptoms of asthma. A study quoted in a W H Foods article on quinoa found that in
children with a low intake of fish and whole grains the prevalence of wheezing was
almost 20%, but was only 4.2% in children with a high intake of both foods. Low
levels of grain and fish consumption also correlated with a much higher incidence of
current asthma, 16.7%, compared to only 2.8% for children with a high intake of
grains and fish.
Spring and summer salads containing quinoa are delicious and make you feel
great
As the seasons move into spring and summer, dishes that are easy to prepare, easy
on the budget, and full of good taste are in demand. This is the season when people
want lighter foods and foods that can be eaten chilled. Quinoa is a salad star. Its
fresh, light taste and high protein content make it an excellent foundation for many
salad recipes. Here are two that are particularly delicious.
QUINOA BLACK BEAN SALAD
1 cup quinoa
2 cups water
4 teaspoons fresh lime juice, or more to taste
1/4 teaspoon ground cumin
1/4teaspoon ground coriander
1 tablespoon finely chopped fresh cilantro
2 tablespoons minced scallions
1 1/2 cups cooked black beans
1 cup diced tomatoes
1 cup diced red bell pepper
1 cup diced yellow bell pepper
2 teaspoons minced fresh green chilies
Extra virgin olive oil
salt and black pepper to taste
Add quinoa to 2 cups of water. Cover and simmer about 10-15 minutes, until all the
water is absorbed. Set aside to cool. Combine lime juice, cumin, coriander, cilantro,
scallions, beans, tomatoes, bell peppers, and chilies. Drizzle with olive oil. Add cooled
quinoa, salt and pepper to taste. Toss. Serves 2-3.
TABOULI
Tabouli is a mid-eastern salad. Make it with quinoa for a delightful new taste.
2 cups quinoa, cooked 1/2 tsp basil
1 cup chopped parsley 1/2 cup lemon juice
1/2 cup chopped scallions 1/4 cup extra virgin olive oil
2 TBL fresh mint or 1 TBL dried mint salt and pepper to taste
1 garlic clove, pressed lettuce leaves, whole
1/4 cup olives, sliced
Place all ingredients except lettuce and olives in a mixing bowl and toss together
lightly. Chill for 1 hour or more to allow flavors to blend. Wash and dry lettuce leaves
and use them to line a salad bowl. Add tabouli and garnish with olives. Serves 4.

Words of Wisdom .... Love and Time Some may argue that this
"should" have been in February's newsletter ... but I think it's a terrific reminder any
time! (Thank you, Gabi!)
Once upon a time, there was an island where all the feelings lived: Happiness,
Sadness, Knowledge, and all of the others, including Love.
One day it was announced to the feelings that the island would sink, so all
constructed boats and left.
Except for Love.
Love was the only one who stayed. Love wanted to hold out until the last possible
moment.
When the island had almost sunk, Love decided to ask for help.
Richness was passing by Love in a grand boat. Love said, "Richness, can you take me
with you?" Richness answered, "No, I can't. There is a lot of gold and silver in my
boat. There is no place here for you."
Love decided to ask Vanity who was also passing by in a beautiful vessel. "Vanity,
please help me!" "I can't help you, Love. You are all wet and might damage my boat,"
Vanity answered.
Sadness was close by so Love asked, "Sadness, let me go with you." "Oh . . . Love, I
am so sad that I need to be by myself!"
Happiness passed by Love, too, but she was so happy that she did not even hear
when Love called her.
Suddenly, there was a voice, "Come, Love, I will take you."
It was an elder. So blessed and overjoyed, Love even forgot to ask the elder where
they were going. When they arrived at dry land, the elder went her own way.
Realizing how much was owed the elder, Love asked Knowledge, another elder, "Who
Helped me?"
"It was Time," Knowledge answered.
"Time?" asked Love. "But why did Time help me?"
Knowledge smiled with deep wisdom and answered, "Because only Time is capable of
understanding how valuable Love is."
