MEMORIAL DAY REMEMBRANCE

Most of us think of Memorial Day as a fun-filled 3-day weekend. However, it
was intended as a way of honoring all of the American Service Veterans who
have sacrificed their lives for a cause which they believed to be far greater
than themselves. Regardless of what an individual may believe about war,
whether righteous or arrogant, those who serve and sacrifice so much
definitely deserve our respect. One way to learn about the sacrifices these
brave individuals make is to read the book,
A Corpsman's Legacy, by
Stephanie Hanson. It is available at most local bookstores and, of course,
amazon.com. Be sure to send a copy to everyone you know who has sent a
son or daughter, husband or wife, brother or sister, father or mother off to
war. Mark THIS Memorial Day with a special tribute for the troops who get no
fun-filled 3-day weekend.


DVD REVIEW -- The Secret

A good friend loaned us a copy of The Secret DVD so John and I could find out
what all the hype was about. As is so often the case, when something is such
a fad, we find it generally most advantageous to run far and fast in the
opposite direction!

What we mainly saw was pure unadulterated greed for
things and power. But
oh my, if wishes were horses! John left the room because he literally could not
stomach it. I toughed it out, however, so I could write my opinion of it. Only
at the very end did any semblance of morality enter the picture. It was not
only the greed that turned my stomach but also the twisting of the Universal
Law of Attraction. While just enough Truth escaped to make it appealing to
most, to me, such blatantly self-serving use of natural energy is essentially
practicing black magic. For my take on using such energies for soul purpose, I
have a whole chapter on it in my book,
Living Energetically.

Another part of the equation is preparation .... preparing yourself for whatever
it is that IS in your soul purpose. This requires taking a deep look at yourself,
examining all your own demons that may be standing in the way of
manifesting your soul purpose, clearing them and moving on from there. It will
also probably entail moving from blame and revenge-seeking to forgiveness,
to compassion, and beyond.

Yet one more facet is self-blame because one didn't "wish" or "focus" hard
enough. For someone naturally depressed, that could be enough to lead them
over the edge into truly self-destructive behavior. Rather, taking some of the
steps as I've mentioned above, can lead to a deeper healing than any fancy
car or house could ever bring to you. I speak of this in my essay
The Healing
Journey.

So view The Secret if you must, but understand there are whole universes
beyond this superficial dramatization.


PET FOOD UPDATE

The upside of all the pet food recalls (which are continuing) is that more and
more people are taking a much closer look at what they are feeding their
cherished companions.

The simplicity of feeding grain-based kibbles has taken over but grains are
neither natural nor particularly healthful for dogs, although certainly some are
far better than others. I consider the
Dynamite Dog Diet to be far and away
the finest kibble available today.

However, NO kibble comes close to a good, meat-based omnivorous diet for
your dog or a virtually all-meat carnivorous diet for your cat (cats are obligate
carnivores). It's just that simple. Those are the diets these animals evolved
upon and those are the diets they should continue to receive. People are so
skewed in their thinking that one checker at the store actually was aghast
when John explained much of the meat he was purchasing was for our dogs.
She actually exclaimed: “Can dogs eat meat?”

All raw diets should contain organ meats and bones in addition to the muscle
meat and dog diets should contain some vegetables and fruits also. While the
purest meats would ideally be free range (only grass-fed/humanely killed
critters) followed by organic (grain-fed, no anti-biotics/hormones, etc.) and
with human-grade (agri-business grown) last, only you can determine what is
best in your particular situation.

In order to present you with different possibilities, I have prepared a
chart of
those raw diets (most frozen, some freeze-dried) I have located with doing
web searches. Personally I prefer those formulas without supplementation
thus leaving room for Dynamite
Showdown for dogs or Purrrformance for
cats. Some have veggies and fruit added; for those that do not, it is relatively
simple to add fresh or frozen raw berries or other fruit and steamed (or
process raw in a blender) raw or frozen veggies to add to the meat base.
However, choices may depend on local availability and the status of your
checkbook.

Please let me know if you find changes that should be made to the chart.

Home cooking might be appropriate for you but it is not nearly so good as a
raw diet for your pet. However, you might want to consider these proportions
as generally suggested by Martin Goldstein, DVM, whose book, The Nature of
Animal Healing, all pet owners should have:
    DOGS: 1/2 meats including some organ meats, 1/4 cooked brown rice or other gluten-
    free grain or sweet potato/white potato mix, & 1/4 steamed organic green/yellow
    veggies
    CATS: 3/4 organic meats including some organ meats, 1/4 @ steamed veggies

TREATS: Many veterinarians warn against feeding rawhide and pig ears
because they can contain chemical residues (from chemicals used to remove
the fur) that can be harmful to your dog’s health. Also, larger pieces
can break off and be swallowed, getting stuck in the intestines and causing
blockages. When the rawhide gets wet from the stomach juices, it swells to
twice its normal size causing serious stomach blockage. Soft and slick rawhide
can also become a choking hazard. And most baked treats are grain based.
Best to stick with jerky from the companies on the chart.

  • Good Chocolate - In a small 6 week study presented at the annual
    American College of Cardiology scientific meeting in New Orleans LA,
    chocolate proved to improve blood vessel function. 45 people were given 8
    ounces (227 grams) of cocoa without sugar, cocoa with sugar or a placebo
    each day. Of the 39 subjects who completed the trial, FMD (Flow Mediated
    Dilation) improved significantly in both cocoa groups -- by 2.4 percent
    among those who had it without sugar and 1.5 percent among those who
    had it with sugar. It dropped 0.8 percent in the placebo group.              

  • Lycopene for Blood Pressure - People with hypertension who consumed
    tomato extract daily for 8 weeks experienced a 10-point drop in systolic
    blood pressure and a 4-point drop in diastolic pressure. In the study, people
    took 250 milligrams of commercial tomato extract daily -- containing about
    15 milligrams of lycopene. That would be equivalent to the lycopene in
    about 3 or 4 tablespoons of tomato paste daily.

  • Corny Vitamin C - many forms of Vitamin C come from less-expensive corn
    sources which can result in allergic reactions, stomach aches, and stomach
    cramping. Additionally, most commercial corn is now GM and is highly
    chemicalized.

  • Master Antioxidant - Alpha lipoic acid (ALA) is unique in that, it is both fat
    and water soluble; thereby allowing it to operate in all environments in the
    body. ALA inhibits the "hydroxyl radical." The hydroxyl radical is considered
    to be the most damaging of the free radicals due to its ability to initiate
    heart disease. Adding to the myriad of benefits, ALA regenerates (through
    redox cycling) other antioxidants like vitamin C and vitamin E, thus helping
    to prevent a deficiency in any one of these vital nutrients. ALA also
    maintains and even increases our bodies' own antioxidant: glutathione.
    Glutathione's best attribute is its ability to protect us from cancer.  
    Glutathione is the chief detoxifier for the human body. Through a process
    known as "conjugation" it attaches to deadly chemicals and escorts them
    out of the body and into the toilet. No other antioxidant confers so many
    benefits to users.  The best natural sources of ALA are spinach, broccoli, and
    beef.

  • Dangerous, Deadly Dieting - Researchers at the University of California
    said an analysis of more than 30 studies showed that while people do lose
    weight initially in weight loss plans, more than two- thirds regain all the
    pounds with most becoming heavier then their pre-diet weight, according to
    a report in the Daily Mail. Experts say that rapid weight gain and loss linked
    to yo-yo dieting has been shown to lead to heart disease, diabetes and a
    weakened immune system. "We decided to dig up and analyze every study
    that followed people on diets for two to five years,” said Dr Traci Mann. “We
    concluded most of them would have been better off not going on the diet at
    all.” Researchers believe problem may be worse, as it is thought that most
    dieters lie about their weight and are not forthcoming about telling
    professionals that they have regained weight.

  • Have A Little Arsenic With Your Chicken - According to an article in the
    April 9 issue of Chemical & Engineering News, the weekly news magazine of
    the American Chemical Society, the arsenic-based compound roxarsone is
    routinely added to the feed of 70 percent of the broiler chickens produced
    every year in the U.S. While this additive to chicken feed is non-toxic in its
    natural form, it converts into inorganic arsenic within the bird. The
    Environmental Protection Agency notes that chronic exposure to inorganic
    arsenic can cause cancer of the bladder, lungs, skin, kidney, nasal passages,
    liver, and prostate, as well as skin damage and circulatory problems. The
    article notes the products from the breakdown of roxarsone end up in
    chicken meat. It is also excreted in chicken litter, contaminating land and
    groundwater. And while the EPA has recently strengthened the standards for
    arsenic in drinking water from 50 parts per billion (ppb), the standards for
    arsenic residues in poultry have remained unchanged for decades. One study
    found that 55 percent of chicken sampled had arsenic levels ranging from 1.6
    to 21.2 ppb. Arsenic additives are already banned in the European Union,
    and Tyson Foods, the U.S.'s largest poultry producer stopped using arsenic
    additives in 2004. McDonald's has also jumped on the bandwagon, asking its
    suppliers not to use the additives. In the case of roxarsone, the industry is
    moving ahead of regulators. According to Chemical & Engineering News,
    neither the Department of Agriculture nor the FDA has actually measured the
    level of arsenic in the poultry meat that people consume.

  • Breast Milk for Weight Loss? - According to an article in the Japanese
    publication Asashi Geino, translated by the Mainichi Daily News, a recent
    study found lactoferrin, a protein found in body fluids may cut visceral fat by
    as much as 40 percent. Visceral fat is the fat deep within the abdomen and
    has been linked to increased risk of heart disease and Type 2 diabetes. Click
    here to read the entire article While lactoferrin is found in many body fluids,
    including mucus and tears, it is found in significant levels in breast milk. The
    scientists at Lion Corp. told Asashi Geino that they accidentally stumbled
    across the slim-down potential while studying lactoferrin’s ability to fight
    gum disease, the Mainichi Daily News reported. Some of the participants
    started to lose weight, so scientists began studying lactoferrin. One of
    advisors of the research told Asahi Geino that three years of data showed
    lactoferrin drastically reduced visceral fat. Lion Corp. plans to use this
    discovery to manufacture a weight-loss product using lactoferrin.

  • Cured Meats a Risk for Lung Disease - Sausage, along with its cured
    cousins, including bacon and luncheon meats, have been associated with an
    increased risk of developing chronic obstructive pulmonary disease (COPD).
    The culprit for this increased risk is the high level of nitrites in cured meats,
    according to a study published to appear in the second issue for April 2007
    of the American Journal of Respiratory and Critical Care Medicine, published
    by the American Thoracic Society. Nitrites are added to meat as a
    preservative, antimicrobial agent and color fixative. Lead author of the
    study, Dr. Rui Jiang of Columbia University Medical Center in New York,
    pointed to earlier studies that show nitrites can cause structural damage in
    the lungs, resembling emphysema. Nitrites form reactive nitrogen proteins
    that can damage the lungs, causing structural damage. This structural
    damage can result in partially blocked airways, resulting in COPD, which
    includes emphysema and chronic bronchitis.

  • Breast Cancer, Surgery & Radiation - Radiation is widely used as a follow-
    up treatment after surgery for breast cancer. But a study published in the
    March 7th Journal of the National Cancer Institute has shown that this kind
    of radiation treatment also increases the risk of heart disease.

It's been said that more cars die prematurely due to poor lubrication than
probably any other cause.  When it comes to human health, I believe that
more health problems develop due to poor nervous system health than
probably any other cause.  

You hear a lot about the importance of exercising for good muscular and
cardiovascular health.  You also hear a lot about following a healthy diet to
promote good overall health.  But how often do you hear about what you can
do to promote good nervous system health?

Given that not a single cell in your body could survive for more than a few
minutes without your
nervous system, I'd say that learning how to take care of your nervous system
should be a top priority when caring for your health.

One of the most powerful ways that you can promote and maintain a healthy
nervous system is to learn how to use your fingers to locate and stimulate
bundles of large nerves and blood vessels throughout your body - this is called
acupressure.  It's free, and it's extremely effective at promoting healthy nerve
tone. Acupressure is a healing art that involves using your fingers to apply
pressure to specific points on your body to produce health-promoting effects.

How can applying pressure to different areas of your body help your health?
The answer lies in understanding your nervous system. Having a healthy
nervous system is an absolute must if you want to have a healthy body, as
the activities of every cell in your body are governed by your nervous system.

An essential requirement to maintaining a healthy nervous system is to
provide your largest nerves with optimal blood flow and stimulation. Doing so
helps to keep your nerves working optimally, just as regular resistance work
and stretching can help to keep your muscles healthy.

Physical exercise, a healthy diet, and regular rest can all help to promote
healthy nerves. But the surest and perhaps most powerful way to maintain

nerves on a regular basis. This is what acupressure is all about.

One of the best features of acupressure is that you do not need to spend
thousands of dollars and many months or years to learn how to use it to help
your health. It would be to your advantage to know enough about human
anatomy to know where all your major nerves and blood vessels are. But
ultimately, as long as you are able to locate key points on your body, you can
be your own practitioner of acupressure.

During a 300-hour postgraduate medical acupuncture program I took several
years ago, after spending several days reviewing many dozens of key nerve
and blood vessel points throughout the body and face, I distinctly remember
the lead professor saying that even if we treated the same five most powerful
points on every patient, irrespective of the health conditions being treated,
we would get excellent results.

Over time, through my own experience with providing acupuncture and
acupressure treatments, I have found that most people can experience
significant health benefits from regularly stimulating just three specific points
on a regular basis. Of course, for specific health concerns, I recommend
treating additional points that have proven to be of benefit. But by and large,
applying pressure to just three points on your body several times a week can
provide a real boost to your nervous system tone and overall health.

Without further ado, here are the three acupressure points that I recommend
most people stimulate on themselves to promote and maintain good overall
health:

  1. Large Intestine 4 (LI-4): located in the soft, fleshy web that sits between your thumb and
    forefinger. For those with knowledge of human anatomy: this point corresponds with
    a muscular branch of the median nerve, the deep branch of the ulnar nerve, proper palmer
    digital nerves from the first common palmar digital nerve, and the superficial branch of the
    radial nerve. Tributary branches of the cephalic vein, the radial artery, and the first dorsal
    metacarpal artery and companion veins can also be found in this region.
  2. Liver 3 (LR-3): located in the soft flesh that sits between your big and 2nd toes, the
    equivalent of LI-4 on your foot. For those with knowledge of human anatomy: this
    point corresponds with the medial dorsal cutaneous nerve, the medial branch of the deep
    peroneal nerve, and a muscular branch from the deep branch of the lateral plantar nerve.
    The dorsal venous network of the foot , the first dorsal metatarsal artery, and a companion
    vein are also found in this region.
  3. Spleen 6 (SP-6): located approximately three finger widths above the inner ankle bone,
    in a tender region of the lower calf muscle. For those with knowledge of human
    anatomy: this point is found in between the medial margin of the tibia and the soleus
    muscle. As you go deeper, this point corresponds with the flexor digitorum longus and
    flexor hallucis longus muscles. This point also corresponds with a cutaneous branch of the
    saphenous nerve, motor branches of the tibial nerve, and the deeper trunk of the tibial
    nerve. A superficial branch of the great saphenous vein, the posterior tibial artery, and a
    companion vein to the posterior tibial artery are also in this region.

Once you have received permission from your primary care provider, you can
use your fingers and/or thumbs to massage these points on one or both sides
of your body for a few minutes, up to two times a day. For optimal results,
massage these points on both sides of your body during each session.

When you correctly locate these points, you should feel some tenderness
when you apply pressure to them. Apply enough pressure/massage to create a
mild, dull, and possibly achy sensation.

If you are not sure about the location of each of the points listed above, I
highly recommend that you take a look at the following book, the best of its
kind: Acupressure's Potent Points: a Guide to Self-Care for Common Ailments.
I actually recommend this as a must-have reference book for every person who
is interested in natural health remedies, as it provides excellent illustrations
of all of the major acupressure points that I and other acupuncturists use in
clinical practice.

If you learn to use acupressure on a regular basis to maintain healthy nerve
tone, I am confident that you will get closer to accessing your full health
potential.

Please note:
  • You should never receive acupressure or acupuncture treatments while pregnant. Certain
    points, including SP-6 can cause uterine contractions. In fact, massaging SP-6 is a
    natural method of inducing labor when desired.
  • Also, acupressure should never be applied to legs that have varicose veins. Applying
    pressure or massage to varicose veins can potentially lead to a pulmonary embolism.

Point to Ponder #2 - Genes At the Wheel in Sex by

When it comes to the matter of desire, evolution leaves little to chance.
Human sexual behavior is not a free- form performance, biologists are finding,
but is guided at every turn by genetic programs.

Desire between the sexes appears not to be a matter of choice. Straight men
have neural circuits that prompt them to seek out women; gay men have
those prompting them to seek other men. Women's brains may be organized
to select men who seem likely to provide for them and their children. The deal
is sealed with other neural programs that induce a burst of romantic love,
followed by long-term attachment.

So much fuss, so intricate a dance, all to achieve success on the simple scale
that is all evolution cares about, that of raising the greatest number of
children to adulthood. Desire may seem the core of human sexual behavior,
but it is just the central act in a long drama whose script is written quite
substantially in the genes.

In the womb, the body of a developing fetus is female by default and
becomes male if the male-determining gene known as SRY is present. This
dominant gene sidetracks the reproductive tissue from its ovarian fate and
switches it into becoming testes. Hormones, chiefly testosterone, then sculpt
the body into male form.

Several advances in the past decade have underlined the bizarre fact that the
brain is a full-fledged sexual organ, in that the two sexes have profoundly
different versions of it.

The male brain is sexually oriented toward women as objects of desire. The
most direct evidence comes from a handful of cases, some of them
circumcision accidents, in which boy babies have lost their penises and been
reared as female. Despite every social inducement to the opposite, they grow
up desiring women as partners, not men.

"If you can't make a male attracted to other males by cutting off his penis,
how strong could any psychosocial effect be?" said J. Michael Bailey, an expert
on sexual orientation at Northwestern University.

Presumably the masculinization of the brain shapes some neural circuit that
makes women desirable. If so, this circuitry is wired differently in gay men. In
experiments in which subjects are shown photographs of desirable men or
women, straight men are aroused by women, gay men by men.


Point to Ponder #3 - Metabolic Harmony by Shane Ellison

Do American's really need nutritional supplements? According to the National
Center for Health Statistics, only nine percent of all American adults consume
enough healthy foods to reach their minimum recommended daily intake of
nutrients to assure proper health.  In other words, 90% of American adults
lack essential nutrients to stay alive.  

Substantiating this, Johns Hopkins researchers Ames and Wakimoto show that
"suboptimal nutrient intake is a widespread problem" in the USA.  Such
nutrients include, but are not limited to, vitamin C, folic acid, magnesium,
acetyl-L-carnitine, zinc, copper, B12, essential fatty acids, vitamin D and
selenium.  The importance of these nutrients demands attention. Take heed.

A lack of nutrients results in a lack of "metabolic harmony." Metabolic harmony
can be described as the ability of your body to properly maintain DNA function
by minimizing damage to it.  DNA serves as a genetic map, continually
working to guide your body to proper health. A deficiency in any ONE nutrient
can wreak havoc on DNA, thereby disrupting "metabolic harmony."  As a result,
the mechanism by which DNA directs the body to perfect health becomes
weakened.

New York – March 2007 -- Trace amounts of arsenic are found in fluoride
chemicals added to drinking water supplies, reports the U.S. Centers for
Disease Control’s (CDC) website. Fluoridation is a controversial attempt to
reduce tooth decay in tap-water consumers.

Fluoridation chemicals - sodium fluoride, sodium fluorosilicate, and fluorosilicic
acid (FSA) – are all derived from the manufacture of phosphate fertilizer,
reports the CDC. Trace amounts of unwanted contaminants, such as antimony,
barium, beryllium, arsenic and others, are allowed to remain in fluoridation
chemicals before flowing through America’s faucets.

The CDC reports, tests by National Sanitation Foundation (NSF) revealed
arsenic was present in sample batches of FSA. When trace amounts were
present, the treated water had an average of 0.43 parts per billion (ppb) of
arsenic, with a high of 1.66 ppb attributable to the fluoride additive.

The NSF sets the allowable level of arsenic in fluoridation chemicals at 2.5
ppb. The maximum contaminant level (MCL) of arsenic in treated water is 10
ppb, set by the Environmental Protection Agency. But the maximum
contaminant level goal (MCLG) of arsenic in drinking water is zero  and is
based on health risks; however, the actual level permitted (MCL) is above 0,
to account for difficulty in removing it or in measuring it.

“No water company should purposely be adding arsenic to water supplies –
even when it’s attached to a chemical perceived to be beneficial,” says Beeber.

Trace levels of arsenic in drinking water increase a person's risk of developing
cancer, according to a report from the prestigious US National Academy of
Sciences. “People drinking water containing just one part per billion of arsenic
have an increased risk of developing bladder or lung cancer of one in 1,000,”
reports New Scientist magazine.

In an analysis of 25 states, the National Resources Defense Council found
about 8,000 U.S. water systems, serving 57,000,000 people, contained arsenic
levels at 1 ppb or higher.

“Fluoridation has proven useless in fighting tooth decay in America’s low-
income population as the recent unfortunate ‘tooth-decay’ death of a 12-year-
old Maryland boy living in a fluoridated area has proven,” says lawyer Paul
Beeber, President, New York State Coalition Opposed to Fluoridation. “No child
is or ever was fluoride-deficient. But many are dentist-deficient,” says Beeber.

“Besides, modern science establishes that fluoridation is ineffective at
reducing tooth decay, harmful to health and a waste of taxpayer money,” says
Beeber.

Point to Ponder #5 - Coal burning having a devastating

Zhang Huaixiang's thin wasted frame dangles from his wooden crutches, his
bowed legs swelled by a disease contracted from a lifelong reliance on coal.

Zhang, 57, a farmer in Guizhou province in the nation's mountainous
southwest, has been near bed-ridden for a year, unable to walk properly due
to the rotting of his bones and joints from fluoride poisoning.

"My knees just hurt too much," Zhang told AFP outside his grey-walled
concrete room subsidised by the government.

He also receives 50 yuan (6.45 US dollars) a month for food, but his brother-in-
law, Li Xiaoxin, also a farmer, said it was not nearly enough.

"I work and live one day and then take care of him the next," said Li, 65.

Zhang is one of 42 million people in China with fluorosis, a condition caused
by ingesting too much fluoride, which corrodes the teeth, pitting them and
turning them a rusty brown, in cases of excessive, prolonged exposure.

In severe cases like Zhang's, the mineral also weakens the bones and stiffens
the joint ligaments, eventually making movement difficult and painful, much
like osteoarthritis does.

In many developed countries, fluoride, which is often naturally occurring in
water and also coal, is added to toothpaste and drinking water.

Since the 1960s many medical experts have believed that small amounts of
fluoride helps prevent tooth decay and strengthen bones.

However, the claimed benefits have increasingly drawn fire from medical
experts who say that there are no tangible health advantages to the human
body.

Several European countries over the last five years have stopped public water
fluoridation programmes amid questions whether the mineral does more harm
than good.

At its most severe, fluorosis results in the type of paralysis Zhang now has,
and can even lead to cancer and brain damage. The sickness is incurable.

In China, where coal is still a primary cooking and heating fuel in rural areas,
the disease is especially prevalent because the fluoride-carrying fumes from
coal burnt inside homes pollute the air and the food.

According to Zhijin health bureau officials, the condition is particularly
widespread in Guizhou because two regional food staples, corn and red
peppers, are dried inside. The rising coal smoke then laces the food with
fluoride.

Wang Jianjun, a vice director of the local health bureau, said extended
educational campaigns have helped raise awareness of the disease, which can
easily be avoided through the use of other cooking fuels.

But the cheapness and availability of coal in rural China has meant that old
practices die hard, Wang said.

"We educate the villagers through television, radio and posters, let them
know the cause and harm of the disease," he said. "It's very hard to change
people's habits."

Wang added that it was not until 1978 that people knew what caused the
disease, so China's older generation stood no chance of avoiding
contamination.

Ma Wenbo, director of the health bureau, said that one partially successful
solution was getting residents to install chimneys in their homes. Another
measure was the use of gas made from manure.

However, the disease is still endemic and in Guizhou, a stunning 92 percent of
the province's 37 million people are estimated to have some form of fluorosis.

While only about 4,000 people have severe skeletal fluorosis, said Ma, a look
around in Zhijin reveals that residents as young as six have decaying teeth
that are severely discoloured and other signs of the disease.

Nationwide more than 2.8 million have some form of skeletal fluorosis,
according to data published in 2005 by China's national health ministry.

The condition is so common in rural China, where 800 million of the nation's
1.3 billion people live, that the health ministry estimates that 100 million are
at risk.

course I have fiddled with the recipes, updating and "healthify-ing" them to
take into account the fact that we live in Colorado rather than Southern
California, and that I prefer to spend my time reading or working on the
computer rather than cooking all day!

Instant Gazpacho
Caesar Salad with Asparagus Spears & Chicknuts
Lemon Roasted Chicken with Roast Potatoes
Apricot Carrot Tsimmes
Blender Black Bean Brownies

Instant Gazpacho - Blend together: 1 large can (3 cups) Muir Glen organic
diced/crushed tomatoes, 1/2 @ chopped small red onion, red pepper, green
pepper, 1 cup seeded/chunked cucumber, 2T olive oil, 1T red wine vinegar, 1
clove garlic, 1T extra virgin olive oil, 1 tsp @ fresh lemon juice & basil,
salt/pepper to taste ... allow to chill, covered, for at least 1 hr. Offer hot
sauce for those who like more spice.

Caesar Salad with Asparagus Spears & Chicknuts -
The day before (if you want to plan ahead).....
  1. prepare head of Romaine lettuce by cutting off the base, discarding the
    tough outer leaves, and washing the rest of the leaves thoroughly; wrap in
    a flour sack towel (or unbleached paper towels) and store in crisper drawer
    until needed; then hand tear into bite sized pieces into large salad bowl.
  2. steam or grill fresh asparagus that have had the ends broken off; mother
    used to love the canned but fresh make a world of difference.... in my
    experience, no frozen spears come close to fresh, either.
  3. instead of croutons, I now use Chicknuts: drain/rinse/dry 1 15 oz can of
    Eden Garbanzo beans, also known as Chickpeas. Toss with enough extra
    virgin olive oil to just lightly coat; sprinkle lightly with salt and spread out
    on a rimmed baking sheet. Bake approximately 10 to 15 minutes or until
    just golden brown. Halfway through the baking time, give the pan a shake
    to make sure the chicknuts toast evenly. Remove from oven, completely
    cool, and store in an airtight container.
Just before serving, make the Caesar dressing ....
  1. separate and place the yolk of one egg in a small mixing bowl (tradition
    has you coddle it, but I don't)
  2. whisk the yolk with 1-2 cloves minced garlic, 1 smashed anchovy, 2T fresh
    lemon juice (about 1/2 lemon), 3 drops Worcestershire and pinch of salt
