Thoughts on Freedom
On this Independence Day when we are supposed to be
celebrating our "Freedom", most of us are shopping madly for
the best bargains at our local big box stores.
Rather than meditating on the meaning of that word "freedom"
which has been bandied about so thoroughly that it appears to
have lost all cogent meaning, we invite friends over to watch
some sort of sports and to gorge ourselves on vast amounts of
food cooked outside on grills from humble to ostentatious.
Not that it is not wonderful to gather and share food and good
times with friends - my goodness, no! Just that, do any of us
really think of what it is we are celebrating?
What IS freedom?
To me, freedom means the ability to take responsibility for my
own life, my own thoughts/words/actions, while respecting and
honoring the lives of others and our environment, without
government micro-management.
So freedom means thinking about our effect on others including
future generations.
It means performing acts and making decisions which will only
make everyone else's lives better and more meaningful.
And certainly in the field of health, it means being able to
make my own choices as to what foods I eat, supplements I
take, and health care I seek.
With all the focus on us trying to "gain freedom" for others
who can now proudly hold up purple fingers, are we losing
sight of some our most basic freedoms for ourselves under the
guise of the Government "watching out for us?" That phrase
seems to me to be summed up in the term "micro-
management."
How can we trust "the Government" to "watch out for our
health" when it is that very same government that cannot take
appropriate care of its very own warriors? As we have heard
now, over and over, the status of follow-up medical care, after
incredible life-saving field attention, is appalling in its apathy
and disdain for vets and their families.
This is the same government that has allowed manufactures,
including agri-business, to poison the air, water and soil of our
entire planet perhaps for generations to come?
That has allowed too many drugs to count to be sold to an
unsuspecting public that has actually killed or severely harmed
hundreds of thousands of individuals, each of whom had
dreams, responsibilities, and loved ones of their own?
No. If we are to have true freedom, we must make it for
ourselves.
We must exercise our legitimate legal right of protest against
unseemly regulations such as the current attempts to allow
utterly non-organic items under the "organic" label.
Such as the attempt to consider all herbs and supplements as
drugs to be under the strict control of medical doctors and
pharmaceutical companies only. This is their CAM
(Complimentary & Alternative Medicine) Guidance attempt.
Such as considering universal healing "tools" (including
massage rocks!) as "medical tools" and that anyone who uses
them with the intent to heal is therefore practicing medicine
without a license and libel for prosecution.
Unfortunately our great country which initially fought for true
freedom from governmental oppression seems to have become
enmeshed in the same self-serving hubris.
The Government is NOT "big Brother" and hopefully this is NOT
1984. We are thinking adults rather than mindless children.
We can see the absurdity of the government trying to take
control over herbs and rocks which have been used benignly
and helpfully since time immemorial.
We can see the absurdity of trying to call various man-made
chemical concoctions "organic."
We are able to educate ourselves so we can choose from a
plethora of healing techniques from ancient to modern.
Please, even if you have never before taken action, now,
before we lose our freedom of choice in what we eat and how
we wish to care for ourselves, is the time to truly take action.
Help stop this runaway train of governmental control now so
that we may truly enjoy our backyard barbecues knowing full-
well that we, too, are warriors preserving our freedom.

- CARDIOVASCULAR NUTRIENT -- Magnesium appears to be
vital for proper cardiovascular function. Reported by the
National Institute of Health, magnesium maintains normal
muscle and nerve function, keeps heart rhythm steady,
supports a healthy immune system, ensures the integrity of
the arterial wall by controlling blood pressure and keeps
bones strong. It also helps regulate blood sugar levels and is
known to be involved in energy metabolism and protein
synthesis. The most advantageous food form of magnesium
are avocados.
- DNA & SODA -- Sodium benzoate, a common preservative
found in drinks such as Coca-Cola, Sprite, Dr. Pepper, Fanta
and Diet Pepsi, has the ability to switch off vital parts of a
person's DNA, according to research from a British university.
The problem is usually associated with aging and alcohol
abuse, but new findings show that drinking soda with the
preservative can eventually lead to cirrhosis of the liver and
degenerative diseases such as Parkinson's. Sodium benzoate,
which derives from benzoic acid, has been used for years by
the carbonated drinks industry to prevent mold from
developing in soft drinks. The ingredient has been the
subject of concern on cancer, because when mixed with
Vitamin C, it turns into a carcinogenic substance called
benzene, the Independent reported. Last year, a Food
Standards Agency survey of benzene in drinks found high
levels in four brands that were removed from store shelves.
"These chemicals have the ability to cause severe damage to
DNA in the mitochondria to the point that they totally
inactivate it: they knock it out altogether," said Peter Piper,
a professor of molecular biology and biotechnology.
- EU BANS FOOD ADDITIVES -- The Europeans show more
concern for the consumer than we, on our side of the pond,
do. A study funded by the EU Food Standards Agency (FSA)
has drawn a direct link between various additives and child
behavior including temper tantrums, poor concentration,
allergies which have skyrocketed since the advent of diet
chemical sweeteners and toxic food additives. Vyvyan
Howard, professor of bio-imaging at Ulster University and
advisor to the FSA, called on parents and manufactures to
"protect our children."
- TRUTH ABOUT ALKA-SELTZER -- Alka-Seltzer Plus® contains
four artificial sweeteners, acesulfame potassium (Ace K),
aspartame, mannitol, and saccharin sodium, plus contains
anhydrous citric acid, flavors, magnesium stearate,
maltodextrin, and sodium bicarbonate.
- HERBS & CHEMOTHERAPY -- Using Chinese herbs either alone
or in conjunction with chemotherapy has been shown to help
protect a breat cancer patient's bone marrow and immune
system, as well as improving the patient's overall quality of
life.
- ANTHOCYANIDIN -- A research team at the University of
Pittsburgh has proven that an anthocyanidin, known as
cyanidin-3-rutinoside, shows the ability to kill leukemia cells
in cultures while leaving healthy cells unharmed.
Anthocyanins are one of the the six subclasses of flavonoids
that naturally occur in all red, blue and purple-colored
vegetables and fruits (even including black beans) and all
have antioxidant, antimutagenic, and anticarcinogenic
benefits.
- GM CONTAMINATION -- An independent laboratory in
Bremen, Germany has confirmed evidence that genetically
modified (GM) crops can contaminate food supplies for miles
around. Within beehives two miles from a site where BM
crops were being grown under government supervision in the
UK, the tests found alien GM material in the honey carried by
the bees gathering pollen from the GM test site areas.
- FOLATE -- A new Dutch research study has found that folic
acid may improve brain function and memory in people over
50 years of age in addition to lowering homocysteine levels,
and thus inflammation, in the system and neural tube
defects during gestation. Foods highest in folate include all
leafy greens and lentils; sea vegetables, other legumes and
many vegetables are considered very good sources.
- DIET SWEETENERS -- Japan and Malaysia do not allow use of
the diet sweeteners. Japan bans aspartame and cyclamate,
while Malaysia prohibits cyclamate.
- BLACK BOXED DIABETES DRUGS -- FDA Commissioner Andrew
von Eschenbach revealed that the FDA is ordering
GlaxoSmithKline to add a "black box" warning to Avandia and
ordering Takeda Pharmaceuticals to do the same for its
competing diabetes drug Actos, strengthening existing
warnings about a condition in which the heart does not
adequately pump blood leading to heart failure. The issue is
separate from an analysis in the New England Journal of
Medicine that said Avandia increased the risk of heart attack.
- QUICK, SAFE & EASY TICK REMOVAL -- From the internet:
Apply a glob of liquid soap to a cotton ball. Cover the tick
with the soap-soaked cotton ball and swab it for a few
seconds (15-20), the tick will come out on its own and be
stuck to the cotton ball when you lift it away.
- TAKE SUMATRIPTAN IF YOU WANT GREEN BLOOD -- During
emergency surgery, a Canadian man began oozing dark green
blood not unlike Mr. Spock might have done if he was on the
operating table. It turned out he had been taking higher-than-
prescribed doses of sumatriptan to treat the migraines.
Sulfhemoglobinaemia is a condition that forms when a
sulphur atom is incorporated into the hemoglobin molecule
and can be caused by medications that contain sulfonamides,
such as sumatriptan. Just by stopping the medication the
blood can return to the standard human color of deep red,
although blood transfusions can be used in severe cases.
- PHARMACEUTICAL GIANT FACES CRIMINAL CHARGES OVER
CLINICAL TRIAL -- The US pharmaceutical giant Pfizer has
been slapped with criminal charges in Nigeria over a
notorious clinical trial it conducted on children during a
meningitis epidemic a decade ago. Patients became
unwitting guinea pigs for a new, untested antibiotic and
many of them either died or were left with permanent
disabilities.
- THE CHINA SYNDROME -- The enormous amount of recalled
dog food contained toxic ingredients from China. Next to be
recalled was toothpaste with toxic ingredients from China.
Such ingredient outsourcing abounds in human products also.
In fact, about 90 percent of all Vitamin C sold in the United
States is from China. They also produce 50 percent of the
world's aspirin and 35 percent of all Tylenol. Ditto for the
majority of Vitamins A, B12 and E.

Cholesterol is a versatile compound that is vital to the function
of the human body and just like everything else, cholesterol
levels differ greatly among individuals.
In humans, cholesterol serves 5 main functions:
1. Cholesterol is used by the body to manufacture steroids, or
cortisone-like hormones, including the sex hormones. These
hormones include testosterone, estrogen and cortisone.
2. Cholesterol helps the liver produce bile acids. These acids
are essential for digestion of fats and ridding the body of
waste.
3. Cholesterol acts to interlock "lipid molecules," which
stabilize cell membranes. Therefore, cholesterol is the vital
building block for all bodily tissues.
4. Cholesterol is an essential part of the myelin sheath. The
myelin sheath, similar to the coating on copper wire, ensures

electrical impulses. Without the myelin sheath, it is difficult to
focus and we can
lose memory.
5. And finally, cholesterol has beneficial effects on the immune
system. Men with high cholesterol have stronger immune

the fact that they have more lymphocytes, total T-cells, helper
T-cells and CD8+ cells.
Many strains of bacteria, which cause us to get sick, are
almost totally inactivated by LDL cholesterol.
In closing, lowering such a vital molecule might be considered
suicide in slow motion. To illustrate, imagine that your house
represents your body and the nails holding it together,
cholesterol. Now start pulling just a few nails out of the house.
What happens? The house turns to a pile of rubble. The same
is true for the
human body.
.... so what's the answer? The main culprit in "raised
cholesterol" levels is a combination of processed foods with all
their attendant sugars, flours, and various additives and an
over-abundance of Omega 6 from vegetable oils. It's natural

It's no secret that mosquito bites can transfer a number of
diseases to humans and animals, the most common of which
are malaria, dengue fever, and encephalitis (inflammation of
the brain).
Before you whip out a can of mosquito-repelling spray during
your next camping trip, you should know that many
conventional brands contain DEET, a powerful pesticide that
has been linked to a number of health problems such as skin
rashes, dizziness, and even seizures.
According to recent studies by researchers at Duke University,
regular and prolonged exposure to DEET via topical application,
especially when used together with other pesticides or
chemicals, causes significant brain cell death and behavioral
changes in laboratory rats.
The American Academy of Pediatrics recommends that children
under six years of age are not exposed to repellents that
contain more than 10 percent DEET. The Academy also
recommends that infants less than two months old are not
exposed to any DEET whatsoever.
DEET is thought to work by blocking insect receptors that are
used to detect carbon dioxide and lactic acid on or around
human and animal targets.
Rather than expose yourself to the toxic effects of DEET and
other pesticides, I encourage you to try some or all of the
following natural measures to prevent mosquito bites:
- Strive to wear light-colored clothing. Many mosquitos use
their vision to locate targets from a distance; dark
clothing and rich foliage are excellent attractants.
- Try not to be outdoors when you are hot. You release
more carbon dioxide when you are hot, and carbon dioxide
is a major attractant of mosquitos.
- Try not to be outdoors after an intense workout. Vigorous
exercise can result in significant lactic acid build-up in
your muscles, and lactic acid is a strong attractant of
mosquitos.
- Don't eat salty foods. Eating salty foods can cause you to
produce higher-than-normal amounts of lactic acid.
- Avoid using products with fruity or floral fragrances. These
fragrances are mosquito attractants.
- Wipe off perspiration on a regular basis. Perspiration
attracts mosquitos via the chemicals contained within.
Perspiration increases the humidity around your body,
which also attracts mosquitos.
- If possible, stay away from pools of water. Even mud
puddles and moist plants attract mosquitos.
Use any of the following natural plant oils as natural mosquito
repellents:
- Lemon Eucalyptus Oil
- Citronella Oil
- Cinnamon Oil
- Rosemary Oil
- Peppermint Oil
These natural plant oils typically need to be re-applied on a
regular basis, as they wear off more quickly than conventional
bug sprays.
A widely available product called Repel Lemon Eucalyptus has
been shown through a number of studies to be an extremely
effective mosquito repellent. Bite Blocker is another
commercially available natural mosquito repellent that has
tested well.
Be aware of the following factors that can lower repellent
effectiveness:
- Use of sunscreens
- Dilution by rain or swimming
- Absorption into skin
- Quick evaporation due to wind and/or high temperatures
. . . Here in Fort Collins, scientists have already found
mosquitoes carrying West Nile Virus. You might want to read
my 4 page article concerning this on my Article page. Although
it specifically addresses horses, the concepts and most
suggestions are universal. Also, the use of natural organic
Apple Cider Vinegar sprayed on with any of the above oils, also
seems to help discourage insects.
Point to Ponder #3 - The FDA Has Blood on
Its Hands by Bill Sardi

Congressman Ron Paul (Texas), running for President these
days, is more than an anti-war candidate; he has launched his
campaign with the introduction of legislation in the House of
Representatives that is likely to gain him plenty of recognition
and unarguable public support. Congressman Paul, not a
government expansionist by any measure, has introduced
legislation that would rein in the Food and Drug Administration’
s absurd restrictions regarding health claims for dietary
supplements.
Lest we forget, passage of the Dietary Supplement Health &
Education Act in 1994, which staved off efforts by the FDA to
designate dietary supplements as drugs, was buoyed by more
letters to Congress than for any other prior issue facing the
nation. Americans don’t like government snooping into
bedrooms, messing with their guns, and certainly not
restricting their access to vitamin pills.
For years, the Food and Drug Administration (FDA) and the
Federal Trade Commission (FTC) have continued to censor and
engage in heavy-handed attempts to restrict access to
supplements and educational information for Americans, even
when courts have ruled the public has a right to information
about dietary supplements and should judge the merits of
health claims for supplements for themselves rather than
having the FDA make such decisions.
The Health Freedom Protection Act
The bill, H.R. 2117, the Health Freedom Protection Act, would
stop the FDA from censoring truthful claims about the curative,
mitigative, or preventative effects of dietary supplements,
says Scott Tips of the National Health Federation, a Monrovia,
California-based organization that is leading the charge behind
this legislation.
In regards to this issue, it’s easy to see why Congressman
Paul has said enough is enough, and puzzling why other
Congressman haven’t lifted a word in protest to the FDA. A
primary example of FDAs absurd policies can be seen in the
recent debacle between cherry growers and the agency.
FDA picks on cherry growers
It began in 1999 when a peer-reviewed report in the Journal of
Natural Products, published by the American Chemical Society,
the world’s largest scientific society, concluded that tart
cherries may relieve pain better than aspirin and many other
anti-inflammatory drugs. It turns out that consumption of
about 20 cherries reduces inflammation in a similar manner as
aspirin or Cox-2 inhibiting drugs without the lethal side effects
of gastric bleeding or vitamin depletion associated with these
drugs. The molecules in cherries, called anthocyanins, work to
reduce inflammation at ten times less dosage than aspirin.
[Journal Natural Products 1999 Feb; 62(2): 294–6] Pills that
provide concentrated anthocyanins would make it even easier
to consumers to achieve these health benefits.
When cherry growers began to cite this scientific study, the
FDA followed by sending a warning letter to 29 companies that
market cherries, threatening regulatory action if they did not
remove the scientific information regarding the anti-
inflammatory properties of cherries from their websites. The
FDA declared cherries to be "drugs" once health claims for a
disease were associated with the product.
Bob Underwood, who sells capsules containing concentrated
cherry paste, was quoted in an Associated Press story in 2006
as saying: "We have the government telling people to eat more
fruits and vegetables, and we have the U.S. Department of
Agriculture funding some of these fruit studies, and now we
have another arm of the federal government that says you
can't use the research." But the problem is much worse than
government censorship. A more foreboding problem lay ahead.
Lives could have been saved
While the FDA was threatening cherry growers, it was giving
approval to a drug maker for a new type of COX-2 inhibiting
anti-inflammatory drug that claimed it was safer than
ibuprofen or aspirin. The FDA also permitted this new
prescription-only anti-inflammatory drug to be advertised on
television, even though long-term safety data was not
available. As it turns out, this drug wasn’t any safer than
aspirin and the FDA took no subsequent action against the
drug maker that submitted misleading preliminary safety data
in its application for FDA approval. This anti-inflammatory drug
went on to cause thousands of side effects and was
associated with the deaths of an estimated 20,000 Americans,
mostly due to mortal heart attacks. An FDA "whistleblower,"
Dr. David Graham, had to alert the public to this problem.
If only the public knew about the anti-inflammatory properties
of cherries, thousands of Americans would have not met their
early and avoidable demise. The FDA has blood on its hands
regarding this issue. It should have elected for cherry stains
instead.
The FDA doesn’t disagree with the scientific information about
cherries, but it does say that cherries have not been
recognized as safe and effective when used as labeled. Do we
need a double-blind placebo-controlled study to prove cherries
promote health?
Jeffrey May, editor of CCH Trade Regulation Reporter (the
"publication of record" in the antitrust and trade regulation
fields), quotes Rep. Ron Paul as saying there is a need to stop
"federal bureaucrats from preventing Americans from learning
about simple ways to improve their health."
Burden of proof on government
The proposed Health Freedom Protection Act would place the
burden of proof on the FTC to establish that an advertisement
for a dietary supplement or a dietary ingredient is "false and
misleading and that the advertisement actually causes
consumers to be misled into believing to be true that which is
demonstrably false."
The FTC has required "supplement manufacturers to satisfy an
unobtainable standard of proof that their statement is true,"
according to Rep. Paul. The bill also requires that the FTC
warn parties that their advertising is false and give them a
chance to correct their mistakes.

If you buy seedless watermelons, or seedless grapes, or GM
soy products, you're already supporting the corporations that
are altering the food supply. Seedless grapes are not natural,
and they remove the very part of the grape that contains
powerful cardiovascular medicine. Have you ever heard of the
nutritional supplement called grape seed extract? Guess where
it comes from? ... Grape seeds, of course. It's some of the
best cardiovascular medicine known to modern science, far

What's at risk: the future of human life on planet Earth

Playing God with seeds and the food supply for the purpose of
extracting maximum corporate profits is to place the very
future of humankind at extreme risk. Suppose the terminator
gene crops somehow cross-pollinate staple food crops that now
feed the world... what happens then? Imagine all the wheat
grown in the United States suddenly self-destructing after a
single growing season. Mass starvation would quickly ensue,
followed by economic collapse, military action and quite
possibly the collapse of the nation itself. And the same is true
in Europe, Australia, Asia and South America, too.
This is what's at stake with terminator gene technology. For
the sake of maximizing corporate profits, the Monsanto
corporation is willing to place the very future of humankind at
risk. But it's no surprise to learn Monsanto is behind this crime
against nature -- this is the same corporation that tried to
patent the pig, claiming it owned the genetic code of hogs.
This is also the same corporation that promoted aspartame to
the world by purchasing a company called Searle, whose CEO
was a man named Donald Rumsfeld. He strong-armed the FDA
to get aspartame approved as "safe," and we've seen alarming
increases in brain tumors and neuro-degenerative diseases
ever since.
I believe there is no natural law that evil corporations led by
greedy men will not violate in order to increase their own
power or profits. Corporations have proven they will poison the
environment, kill members of the public, bribe politicians,
violate federal law, engage in competitive espionage, threaten
critics, bribe the media, endanger lives, wipe out animal
species and sacrifice the very future of life on planet Earth in
order to squeeze out one more quarter of filthy profits. And
they will do it with a straight face, while actually claiming they
are "green."
There will be a day when the people will rise up against the
corruption and overreaching power of the corporations. In time,
they will reclaim their natural right to seeds, a clean
environment, and natural health remedies. Today's patent laws
-- which give ownership over virtually all commonsense ideas
to corporations -- will crumble, and governments that colluded
with corporations to strip power, health and dollars from the
people will pay the price.
Until that day, of course, it's business as usual in the free
market: Screw the people, violate the planet, desecrate nature
and keep that share price propped up as high as possible.
That's business as usual in the United States, a nation that
has sold its soul to the highest bidder on eBay and now stands
as an alarming historical example of what happens when a free
market economic abandons basic ethics and human rights.

What can you do about all this? Grow heirloom plants, buy
organic, non-GM foods and refuse to do business with

Point to Ponder #5 - Acupressure Point for
Boosting Mental Alertness and Energy by Dr.

One of the first points that I learned about during my
education in contemporary medical acupuncture was GV-26,
also known as Governing Vessel 26.
GV-26 is also called Shui Gou, and is traditionally used as a
first-aid revival point due to its effectiveness in restoring
consciousness and mental alertness after a person has fainted
or become extremely weak.
I regularly recommend GV-26 as a point that people can apply
pressure to for about a minute at a time to increase mental
alertness and physical energy. Pressure can be applied with
the tip of a finger, or for increased effectiveness, with the tip
of a fingernail.
I have found that self-application of pressure to GV-26 is
particularly useful for drowsy drivers, providing an almost
immediate boost of alertness that can be life-saving. GV-26
can also promote mental clarity and focus, useful for when a
project is at hand and the brain feels sluggish.
- GV-26 is located between your upper lip and nose, about
one-third of the way down from the bottom of your nose.

Beyond promoting mental alertness, I have consistently found
that application of pressure or an acupuncture needle to GV-26
can accelerate healing and restoration of range of motion after
a sprain/strain of the back.
Stimulation of GV-26 by finger or needle can produce powerful
effects because this point allows access to two important
cranial nerves: the trigeminal and facial nerves. Both of these
nerves carry signals back to the brain stem in areas that are
ripe with autonomic nervous system activity.
- For those with knowledge of human anatomy: GV-26
provides access to muscular branches of the right and left
buccal branches of cranial nerve VII, and superior labial
branches of the infraorbital nerve, which is a branch of the
middle division of cranial nerve V. GV-26 also provides
access to branches of superior labial arteries and
tributaries of companion veins.

Menu of the Month - Independence Day Picnic
Everyone wants to grill hot dogs and hamburgers for the big
July 4th picnics. This year, how about trying some chicken,
steak, salmon and veggies instead? Here are four delicious
salad choices utilizing those grilled items. If it's pouring rain,
use your broiler instead! FIRE STARTING HINT: this from the
internet Dollar Stretcher Tips . . . Cover a cotton ball or swab
with a light coating of petroleum jelly (Vaseline) and use as a
fire starter in your open fire or fire range. This is much cheaper
than traditional fire starters. And they hold their flame for
about five minutes, which is plenty of time to add that dry
wood.
ASIAN CHICKEN SALAD
Marinate 1 pound chicken breast at least 2 hours in a mixture
of 1T sesame oil, 1T@ minced garlic & ginger, and 2 tsp fresh
lime juice for 1 hour; drain, discard marinade. Grill chicken on
high heat until cooked through and cut into thin strips. Toss
with thinly sliced bok choy or savoy cabbage,1/4 cup @
thinly/diagonally sliced scallions, slivered raw snow peas, red
peppers, chopped cilantro and enough dressing to coat.
DRESSING: Blend together 1/4 cup ACV, 3T walnut or
macadamia nut oil, 2T sesame oil, 1T almond butter, 1.5T raw
honey, 1 tsp @ Dijon mustard & Tamari, 1 egg yolk,
salt/pepper to taste.
HEARTY STEAK SALAD
Marinate 1# flank steak (or sirloin tip) in a mixture of 2T olive
oil, 1T red wine vinegar, 1 tsp @ Worcestershire sauce &
strong brown mustard, 1 minced clove garlic, and freshly
ground pepper to taste
for 2 hrs to 2 days; drain, discard marinade. Grill steak on
medium-high, close lid (or cover loosely with foil) and cook 11–
13 minutes on each side or until internal temperature reaches
145°F. Meanwhile, place a mix of baby spinach, arugula and
red leaf lettuce in bowl; toss with 1 pint grape tomatoes, 4 oz
fresh sliced mushrooms, 2-3 slices red onion, and 2-3 sliced
scallions. When steak is done, cut diagonally into very thin
slices and place on top of salad. DRESSING: blend together 1/4
cup balsamic vinegar, 1/2 cup olive oil, 2 teaspoons strong
brown mustard, NTM salt and freshly ground black pepper to
taste.
CITRUS SALMON SALAD
Rub 1# skin-on salmon steak with olive oil, NTM salt & pepper.
Grill on hot grill 5-7 minutes on each side starting with skin
side. Meanwhile, toss together a mix of baby greens, 1/2 cup
halved Kalamata olives, 2 segmented oranges (zest them
first), and about 15 diagonally-sliced, steamed asparagus
spears. When fish is done but still rare inside, slice on the
diagonal into very thin slices and place on top of the salad.
DRESSING: blend together 1/4 cup rice vinegar, 1/2 avocado
oil, zest from oranges, 1T minced shallots, NTM salt & pepper
to taste.
MIXED VEGGIE SALAD
In a bowl, stir together 1/2 cup olive oil, 1/4 cup balsamic
vinegar, 2 cloves minced garlic, 1T @ minced fresh basil &
oregano, NTM salt and pepper. Stir in 1 @ sliced zucchini,
yellow squash, small Japanese eggplant, red pepper,
portobello mushroom and toss to coat. Grill over high heat just
until tender. Toss 1 bunch arugula and 1/2 head torn romaine
leaves with remaining vinaigrette mixture in bowl. Arrange
leaves on platter, top with grilled vegetables and fresh
Parmeggiano Reggiano shavings. VARIATION: Add roasted
garbanzo beans -- rinse and dry 2 cups cooked/canned
chickpeas/garbanzos, toss with a dab of olive, walnut, roast
sesame or coconut oil (each will impart a different flavor), NTM
Salt & pepper and roast in hot oven 10-15 minutes until golden
brown. Add a touch of cayenne pepper if you want some heat.
DESSERT
Is there any dessert more suitable for an outdoor summer
picnic than a big slab of fresh watermelon? Naturally complete
the fun and the day with a seed spitting contest!
Words of Wisdom .... Practicing love and
compassion
The Wet Pants Thanks, Alice!
In a third grade classroom, there is a nine-year-old kid sitting
at his desk.
All of a sudden, there is a puddle between his feet and the
front of his pants are wet. He thinks his heart is going to stop
because he cannot possibly imagine how this has happened.
It's never happened before, and he knows that when the boys
find out he will never hear
the end of it. When the girls find out, they'll never speak to
him again as long as he lives.
The boy believes his heart is going to stop. He puts his head
down and prays this prayer, "Dear God, this is an emergency! I
need help now! Five minutes from now I'm dead meat."
He looks up from his prayer and here comes the teacher with a
look in her eyes that says he has been discovered.
As the teacher is walking toward him, a classmate named
Susie is carrying a goldfish bowl that is filled with water. Susie
trips in front of the teacher and inexplicably dumps the bowl of
water in the boy's lap.
The boy pretends to be angry, but all the while is saying to
himself, "Thank you, Lord! Thank you, Lord!"
Now all of a sudden, instead of being the object of ridicule, the
boy is the object of sympathy. The teacher rushes him
downstairs and gives him gym shorts to put on while his pants
dry out. All the other
children are on their hands and knees cleaning up around his
desk. The sympathy is wonderful.
But as life would have it, the ridicule that should have been
his has been transferred to someone else - Susie. She tries to
help, but they tell her to get out. "You've done enough, you
klutz!"
Finally, at the end of the day, as they are waiting for the bus,
the boy walks over to Susie and whispers,
"You did that on purpose, didn't you?"
Susie whispers back, "I wet my pants once too."
A Stich in Time Thanks Nancy!
It was a busy morning, approximately 8:30 am., when an
elderly gentleman in his 80's, arrived to have stitches removed
from his thumb. He stated that he was in a hurry as he had an
appointment at 9:00 am.
I took his vital signs and had him take a seat, knowing it
would be over an hour before someone would to able to see
him. I saw him looking at his watch and decided, since I was
not busy with another patient, I would evaluate his wound.
On examination, it was well healed, so I talked to one of the
doctors, got the needed supplies to remove his sutures and
redress his wound.
While taking care of his wound, we began to engage in
conversation. I asked him if he had another doctor's
appointment this morning, as he was in such a hurry. The
gentleman told me no, that he needed to go to the nursing
home to eat breakfast with his wife.
I then inquired as to her health. He told me that she had been
there for a while and that she was a victim of Alzheimer's
disease. As we talked, I asked if she would be upset if he was
a bit late.
He replied that she no longer knew who he was, that she had
not recognized him in five years now.
I was surprised, and asked him, "And you still go every
morning, even though she doesn't know who you are?"
He smiled as he patted my hand and said, "She doesn't know
me, but I still know who she is."

in the state this
year, health
officials said. The
victim is 51 and
lives in Logan
County, but no
other information
was released.
West Nile is
usually
transmitted to
humans by
mosquitoes,
which can pick it
up from birds
they bite. Only
about one in five
infected people
get sick. One in
150 infected
people will
develop severe
symptoms
including neck
stiffness,
disorientation,
coma and
paralysis. Last
year, 345 people
contracted West
Nile in Colorado,
including seven
who died.
