  • ASPIRIN TRUTH -- Marketed and prescribed for daily use to prevent
    heart attacks, aspirin depletes the body of the life-saving nutrient folic
    acid (as well as iron, potassium, sodium and vitamin C). Symptoms of
    folic acid depletion include anemia, birth defects, elevated
    homocysteine (a risk factor for heart disease), headache, fatigue, hair
    loss, insomnia, diarrhea and increased infection. This warning should
    not be taken lightly. Studies show that the side effects of aspirin are so
    severe that they can cause a higher death rate relative to the
    populations who do not take it.

  • THE YEAST CONNECTION TO HEAVY METAL TOXICITY -- The
    presence of heavy metals in the body (lead, silver, mercury) coming
    from food, the air that we breath, medicines and dental fillings (contain
    50% amalgam), create an acidic and anaerobic (lacks oxygen)
    environment that encourages candida yeast overgrowth. When there is
    toxic metal overload in the intestine, the intestinal lining produces extra
    mucus to block metals from being absorbed into the blood stream. The

  • YOUR BONES ON ANTI-DEPRESSANTS --According to the Archives of
    Internal Medicine and other sources, a pair of American studies have
    concluded that certain drugs within the most popular class of
    antidepressants (SSRIs like Paxil, Zoloft, and Prozac) can contribute to
    a higher risk of osteoporosis in both men and women.Both an Oregon
    Health and Sciences University study of nearly 6000 men over 65 and a
    University of Minnesota study of over more than 2700 women with an
    average age of 80 found that hip fractures were measurably more
    common among those taking SSRIs...As it turns out, the same protein
    that carries a chemical these drugs inhibit in the brain (serotonin) also
    exists in high concentrations in the bones. Clearly, inhibiting it in the
    whole body - which is what happens with anti-depressant taking -
    makes one's bones more prone to breakage.

  • DOWN AT THE CORNER (CHINESE) DRUGSTORE -- China makes 70
    percent of the world's penicillin, 50 percent of its aspirin and 35 percent
    of its acetaminophen (often sold under the brand name Tylenol®), as
    well as the bulk of vitamins A, B12, C and E. And yes, this is the same
    country that recently was discovered serving their population cardboard
    as 50% of the ingredients in the flour of their steamed buns.

  • OMEGA 3 ZAPS PROSTATE CANCER --The July 2007 issue of the
    Journal of Clinical Investigation carries a Wake Forest University study
    in which mice, genetically bred to develop prostate cancer, were divided
    into three groups and fed diets with three different omega-6 to omega-3
    ratios: 1:1, 20:1, and 40:1. Mice in the 1:1 group had a 60 percent
    survival rate, while survival was only 10 percent in the 20:1 diet group.
    None of the mice in the 40:1 group survived. Last year, a UCLA
    laboratory study showed that PSA levels and prostate cancer growth
    rates were reduced when omega-6 to omega-3 ratio was closer to 1:1.
    And earlier in the year, a mouse study published in the British Journal of
    Cancer showed that prostate cancer spread to bone marrow when
    omega-6 levels were high, but not when omega-3 levels were high
    enough to balance the ratio.

  • WOMEN ABSORB 5# CHEMICALS PER YEAR FROM BEAUTY
    PRODUCTS -- Women who use make-up on a daily basis can absorb
    almost 5 pounds of chemicals into their bodies each year.Some of the
    compounds present in make-up have been linked to side effects ranging
    from skin irritation to cancer. One class of cosmetic chemicals which
    could be dangerous are parabens. Traces of parabens have been found
    in breast tumor samples. Another chemical, sodium lauryl sulfate, can
    cause skin irritation.Nine out of ten women also use out-of-date lipstick
    and mascara, which can be a breeding ground for harmful bacteria. Many
    women use more than 20 different beauty products a day. The effects of
    these multiple combinations of chemicals are largely unknown.

  • NUTRIENT LOSS WITH MICROWAVES -- Microwaves heat your food
    by causing it to resonate at very high frequencies. While this can
    effectively heat your food, it also causes a change in the chemical
    structure of the food that can lead to health issues. A study published
    in the November 2003 issue of The Journal of the Science of Food and
    Agriculture found that broccoli "zapped" in the microwave with a little
    water lost up to 97 percent of the beneficial antioxidant chemicals it
    contains. By comparison, steamed broccoli lost 11 percent or fewer of
    its antioxidants.

  • TEFLON ALLERGIES -- In addition to already-known problems like
    cancer and birth defects yet another danger of Teflon is uncovered.
    Perfluorooctanoic acid (PFOA), used to make stain-resistant clothing and
    non-stick surfaces such as Teflon, may cause the immune system to
    overreact to allergens. Mice given PFOA produced more allergen-specific
    antibodies, and experienced more constriction of their airways, when
    exposed to an egg allergen.Currently, no studies have looked at the
    effects of PFOA on allergies in humans. PFOA is now present in the
    blood of 95 percent of the U.S. population. PFOA has already been
    identified as a "likely" human carcinogen by an advisory panel to the US
    Environmental Protection Agency.

  • AUTISM RISES WITH VACCINES -- In China, prior to 1999, autism was
    virtually unheard of. Then manufacturers started providing vaccines for
    Chinese children in 1999 and since then, the autism rates in China have
    soared. This is very suggestive that it is the vaccine that is causing
    much of this condition. Children used to only get 3-6 vaccines before the
    age of 5. Children have to now get upwards of 23 doses of various
    vaccine including the thimerisol (mercury) that sterilizes and preserves
    the vaccine. 23 doses of thimerisol in a very short amount of time. The
    brain damage is occurring when any of the noted side effects are
    occurring...fever, lethargy, seizures, etc.

  • ECHINACIA, VIT C, & COLDS - In a new echinacea study, researchers
    from the University of Connecticut School of Pharmacy performed a meta-
    analysis of 14 individual echinacea studies. Their conclusion: "Echinacea
    decreased the odds of developing the common cold by 58 %...and the
    duration of a cold by 1.4 days." The team also reported that one of the
    studies examined echinacea combined with vitamin C. The result: Risk
    of developing a cold dropped by more than 85 percent, compared to
    placebo. In that same study, subjects who took echinacea alone
    lowered their risk by 65 percent. Look for products that are extracted
    from the echinacea root to avoid possible allergens from the flowers.
    Herbalists suggest two weeks should be the maximum length of time for
    taking echinacea.

  • HARVARD SAYS INTERVAL TRAINING IS THE WAY TO GO - In the
    Harvard Health Professionals Study of over 7,000 peope, researchers
    found that the key to preventing heart disease short bursts of intensity,
    followed by short periods of rest. Not only did it dramatically lower risk
    of heart disease, but increased lung capacity and burned fat for 24
    hours following the exercise. They also discovered that long-distance
    runners have a higher risk of sudden cardiac death than other athletes.
    The idea is to exert for several seconds or a minute and then have a
    recovery period of 1-2 minutes to get the heart rate to within 20 beats
    of its resting rate. In fact workouts should last no longer than 15-20
    minutes, using the outdoors, pool and many different types of
    equipment or the person's own bodyweight. The idea is variety so as to
    allow for all levels of physical fitness in ways to suit every body and
    mental type.

  • THE LINK BETWEEN POP, CIRRHOSIS & PARKINSON'S -- The UK
    Independent reports about a disturbing new study from Sheffield
    University's researchers on aging. They have discovered that a common
    ingredient in some soda-pops - sodium benzoate - can actually cause
    damage to a person's cellular mitochondrial (cellular "powerhouse")
    DNA. This damage can lead to cirrhosis of the liver which in turn can
    contribute to neuro-degenerative diseases like Parkinson's.

  • WARNING: PRESCRIPTION DRUGS MAY CAUSE OBESITY --
    Commonly used prescription drugs can interrupt many weight regulating
    factors. When used long term (6 months or more), these drugs elicit
    obesity among most users. This is true despite rigorous workout or diet
    routines that may be employed. The most common of these drugs are
    those used to treat high blood pressure (beta blockers such as
    Atenolol), depression (SSRI's such as Zyprexa), and diabetes  
    (sulfonylureas such as Amaryl and thiazolidinediones such as Avandia).

The mystery of the missing honeybees may have a simple solution. But
will anyone pay attention?

Over the past few months I've been following a stream of daily updates
about colony collapse disorder (CCD), the phenomenon in which bees
abandon their hives and disappear. CCD continues to be reported
throughout the U.S. and Canada - a potential disaster for food crops that
require pollination.

Most of the updates I've seen come from newspapers that detail local
incidences of CCD. And most of them read the same: a description of the
overall problem followed by interviews with local beekeepers. Each of
these accounts notes the various theories about what causes CCD (all
speculation at this point): fungi, bacteria, pesticides, parasitic mites,
weakened immune systems, and even interference from cell phone towers.

But this week I came across an entirely different CCD article. The title:
"No ORGANIC Bee Losses."

Point to Ponder #2 - New Hope in the Upstream Battle
Against Prostate Cancer by Alan Inglis, MD

There’s an 80 percent chance that a man will develop prostate cancer at
some point in his life. Fortunately, most forms of the disease are so slow-
growing that a man is likely to die from something else before the
prostate cancer can kill him.

And now there’s new research indicating that prostate cancer may be
slowed even more, just by eating salmon or tuna.

The research, involving dietary omega-3s, has so far been tested only in
mice but with very promising results.

Mice were genetically modified so that they would lack a prostate-cancer
tumor-suppressor gene—called Pten—that would leave them highly
vulnerable to prostate tumors. This genetic modification mimics a
causative factor in humans that is responsible for one-third of human
prostate cancers.

Of the mice that developed prostate tumors, some were put on a diet
high in omega-3 fats, others a diet low in omega-3 fats, and still others a
diet that was high in just omega-6 fats. Sixty percent of the mice on the
high omega-3 diet survived, only 10 percent of those on the low omega-3
diet managed to survive, and there was a zero survival rate for those
mice that were eating a high omega-6 diet.

Beyond just omega-3 fatty acids, it was the type of omega-3s that was
used. Specifically, the research team looked at long-chain omega-3s, one
of the two varieties of omega-3s, the other being short-chain.

The difference between long-chain omega-3s and short-chain ones is the
way your body processes them. The long-chain variety, found in oily fish
like salmon, mackerel, tuna, and herring, is the more effective of the two,
because it contains both EPA and DHA—the actual fatty acids. The short-
chain variety, found in plant sources, has alpha linolenic acid (ALA)—some
of which can be converted into EPA, but only miniscule amounts of which
can be converted into DHA. Having to go through this process—an extra
step, basically—is what makes it the less-efficient variety. Plus, ALA
actually gets burned up as energy—which also makes it a less-efficient
source of EPA and DHA.

The research team believes that these long-chain omega-3s can interact
with a molecule, called “BAD,” that causes cancer cells to self-destruct in
a process known as apoptosis. The researchers plan to continue their
study to see if there is a difference between the two varieties of omega-3
and their abilities in slowing prostate cancer and promoting apoptosis.

I recommend you get omega-3 fats from fish oil (1,000 to 2,000 total EPA
plus DHA per day).

Point to Ponder #3 - Aspartame Found to Cause
Breast Cancer, Leukemia and Lymphomas in Latest

A new study on aspartame conducted by the Ramazzini Foundation
reveals that aspartame causes a dose-dependent increase in cancers
(lymphomas, leukemias and breast cancers) when consumed at levels
approaching those consumed by humans in diet soft drinks. Specifically,
the study shows:
    a) a significant dose-related increase of malignant tumor-bearing
    animals in males, in particular in the group treated at 2000 ppm;
    b) a significant increase of the incidence in lymphomas/leukemias in
    males treated at 2000 ppm and a significant dose-related increase of
    the incidence of lymphomas/leukemias in females, in particular in the
    group treated at 2000 ppm;
    c) a significant dose-related increase of the incidence of mammary
    cancer in females, in particular in the group treated at 2000 ppm.

Conclusions. The results of this carcinogenicity bioassay not only confirm,
but also reinforce the first experimental demonstration of [aspartame's]
multipotential carcinogenicity at a dose level close to the acceptable daily
intake (ADI) for humans. Furthermore, the study demonstrates that when
lifespan exposure to [aspartame] begins during fetal life, its carcinogenic
effects are increased.

The study, entitled "Lifespan Exposure to Low Doses of Aspartame
Beginning During Prenatal Life Increases Cancer Effects in Rats" has been
accepted for publication in the peer-reviewed journal Environmental
Health Perspectives (EHP), the most widely-read environmental science
journal in the world.

This is the second study conducted by the Ramizzini Foundation
documenting the cancer-causing effects of aspartame in animals. Most
sane people, when faced with such evidence, would ask the obvious
questions: Could aspartame also cause cancer in humans? Should we
review the safety of aspartame just in case?

Point to Ponder #4 -- Reversal of Fortune: The Link
Between IBS and Fructose by Jenni Thompson, Health

If you're one of the millions who suffer from irritable bowel syndrome
(IBS) (which affects 40 million in the U.S. alone), you know all too well
the uncomfortable symptoms: diarrhea, constipation, gas, and bloating.

To make matters worse, IBS can be triggered by a number of factors,
including stress, hormonal changes associated with menopause, and even
the disruption of the brain neurotransmitter serotonin that helps regulate
the digestive system. And because selective serotonin reuptake inhibitors
(SSRIs), such as Prozac, increase serotonin levels, SSRIs are sometimes
prescribed to treat IBS. Anti-gas and anti-diarrheal medications are also
prescribed, as well as acid reflux drugs.

But before you sign on for an expensive round of drugs with who-knows-
what side effects, you need to know about a new study that confirms
what we've known for a long time at HSI: a dietary adjustment is often
the only treatment necessary to relieve IBS.

       
Avoidance techniques
The next time you're at the grocery store, pick out a few products at
random - cereal, soft drinks, crackers, etc. - and look for "fructose" on the
ingredients panel. More often than not, you'll find it there. Fructose was
once embraced as the healthy alternative to sugar, but the evidence now
suggests that fructose can be just as harmful as table sugar. And it may
also trigger irritable bowel syndrome.

As part of their ongoing fructose research, a team of gastroenterologists
at the University of Iowa (UI) recently conducted a one-year study to
determine if IBS symptoms could be reduced with a fructose-restricted
diet.

A group of 80 IBS patients were given a fructose intolerance breath test.
This test checks for the presence of gases in the breath that are produced
when fructose is not properly absorbed in the digestive tract. Thirty
subjects were found to be fructose intolerant. Each member of this group
was given detailed information about dietary sources of fructose and how
to avoid them.

Over the course of the following year, four patients dropped out of the
study. When the remaining subjects were interviewed to determine their
level of IBS symptoms and assess their compliance with the fructose-free
diet, 54 percent had successfully remained on the diet. This group
showed a significant decline in IBS symptoms, and some reported
complete absence of abdominal pain.

All of the subjects who didn't stick to the fructose-free diet showed no
improvement in their IBS symptoms.

Reporting these findings at the 68th Annual Meeting of the American
College of Gastroenterology earlier this month, the IU researchers noted
that their previous fructose research indicated that perhaps more than
half of all IBS patients are fructose intolerant (particularly those with
persistent
diarrhea). And many of these patients might easily reduce their symptoms
simply by avoiding fructose foods.

       
Absorption issues
Fructose intolerance could more accurately be described as fructose
malabsorption. If your body is unable to absorb fructose during digestion,
the fructose passes into the colon where it's consumed by bacteria. When
bacteria digests fructose in the colon, acids and gases are produced that
trigger IBS symptoms such as bloating, cramping and diarrhea. Some of
the gases pass into the bloodstream, and can then be detected in the
breath, which is why the breath test is an effective way to diagnose
fructose intolerance.

But IBS patients who try to remove fructose from their diets have their
work cut out for them. Fructose is found primarily in alcoholic beverages,
corn, and corn-based products. Unfortunately, derivatives like corn oil, corn
syrup, and fructose syrup are used in a wide variety of foods.

In the e-Alert "Back to the Garden" (11/19/02) I told you about a review
of nutritional data from the Department of Nutrition at the University of
California, Davis, revealing that America's consumption of fructose rose
more than 25 percent between 1970 and 1997; due primarily to its use in
processed foods.

In animal studies, the UC team found that fructose consumption
contributes to insulin resistance, an impaired tolerance to glucose, high
blood pressure, and elevated levels of triglycerides. And although the
data in humans is not quite as conclusive as the animal trials, the
researchers report that an increased intake of fructose may increase body
weight and encourage insulin resistance, both of which are risk factors for
type 2 diabetes.

If you have any of the symptoms of irritable bowel syndrome, you
certainly can't go wrong by reducing your fructose intake. Then ask your
doctor about taking a fructose breath test. If your doctor isn't familiar
with this test, you may be able to find a physician who is by checking the

Point to Ponder #5 - Easy Greening: Shopping Bags

As far as shopping bags go, the plastic versus paper dilemma is just as
puzzling as the classic one about the chicken or the egg. The truth is, the
statistics on both types of bags are deeply disturbing. At first glance the
alternatives seem less than convenient—-but after learning the facts and
finding some easy solutions, we're gladly saying "No thanks" to "Paper or
plastic?"

SIMPLE SOLUTION:  
In South Africa plastic bags have been dubbed the "national flower"
because so many are seen fluttering from fences and dangling in bushes—-
some report that at times it looks like a snow storm. According to the
National Geographic News, between 500 billion and one trillion plastic
grocery bags are consumed worldwide each year. That 100,000 birds die
annually from encounters with plastic bags actually seems like a relatively
small number—-ditto the estimated 100,000 whales, turtles, and other
marine animals.

In the United State alone, 12 million barrels of oil are required to produce
enough plastic bags to appease our needs. And then there’s that little
decomposition problem: 500 years in the landfill.

OK, paper then, right? Well, actually. . .producing paper bags requires
more energy and creates more air and water pollution than producing
plastic bags. Recycling paper is much more energy-intensive than
recycling plastic—-and then there’s the issue of all those trees. In 1999,
14 million of them were knocked out to create the 10 billion paper grocery
bags we used that year.

Armed with this knowledge, here's what we’ve decided: reusable shopping
bags aren't such a hassle after all. Here are some tips:

1. Pack some ultra compact nylon bags (that fold up into tiny packets) in
your purse so that you are always prepared for unexpected errands.

2. Stow fabric (hemp, jute, canvas, cotton, recycled plastic textile, etc)
bags in your trunk for big shopping trips-—just get in the habit of
returning them to the trunk after unpacking groceries.

3. Reusing plastic and paper bags helps; keep a supply of them in your
trunk for groceries and use them until they are too worn, then recycle.
(Some stores, like Whole Foods, offer a rebate when you BYOB.)

4. Look French and use baskets when you go to the farmers' market.
Salad doesn't get as squashed when you put it in a round-bottomed
basket.

5. If you get stuck with groceries but without your totes, pick plastic:
when statistics are compared, it is the lesser of the two evils. Try to
reuse it again and when it comes time to recycle it, tie it in a knot to
keep it from blowing away from the trash and landfill and into the trees
and ocean. Some chain supermarkets, like Stop N'Shop, actually have a
barrel in front for recycling plastic bags.

The best advice is to simply get into the mind-set: once it becomes habit
the inconvenience disappears and it seems there was never another way.
In fact, in 2002 Irish supermarkets began charging a mandatory 15-cent
tax on each new plastic bag. According to one of the largest grocery

Point to Ponder #6 -- Science of Vaccine Damage by

A team at Purdue University School of Veterinary Medicine conducted
several studies to determine if vaccines can cause changes in the immune
system of dogs that might lead to life-threatening immune-mediated
diseases. They obviously conducted this research because concern already
existed. It was sponsored by the Haywood Foundation which itself was
looking for evidence that such changes in the human immune system
might also be vaccine induced. It found the evidence.   

The vaccinated, but not the non-vaccinated, dogs in the Purdue studies
developed autoantibodies to many of their own biochemicals, including
fibronectin, laminin, DNA, albumin, cytochrome C, cardiolipin and collagen.
This means that the vaccinated dogs -- ”but not the non-vaccinated dogs”
-- were attacking their own fibronectin, which is involved in tissue repair,
cell multiplication and growth, and differentiation between tissues and
organs in a living organism.   

The vaccinated Purdue dogs also developed autoantibodies to laminin,
which is involved in many cellular activities including the adhesion,
spreading, differentiation, proliferation and movement of cells. Vaccines
thus appear to be capable of removing the natural intelligence of cells.   
Autoantibodies to cardiolipin are frequently found in patients with the
serious disease systemic lupus erythematosus and also in individuals with
other autoimmune diseases. The presence of elevated anti-cardiolipin
antibodies is significantly associated with clots within the heart or blood
vessels, in poor blood clotting, haemorrhage, bleeding into the skin,
foetal loss and neurological conditions.   

The Purdue studies also found that vaccinated dogs were developing
autoantibodies to their own collagen. About one quarter of all the protein
in the body is collagen. Collagen provides structure to our bodies,
protecting and supporting the softer tissues and connecting them with the
skeleton. It is no wonder that Canine Health Concern's 1997 study of
4,000 dogs showed a high number of dogs developing mobility problems
shortly after they were vaccinated (noted in my 1997 book, What Vets
Don't Tell You About Vaccines).   

Perhaps most worryingly, the Purdue studies found that the vaccinated
dogs had developed autoantibodies to their own DNA. Did the alarm bells
sound? Did the scientific community call a halt to the vaccination
program? No. Instead, they stuck their fingers in the air, saying more
research is needed to ascertain whether vaccines can cause genetic
damage. Meanwhile, the study dogs were found good homes, but no long-
term follow-up has been conducted.

At around the same time, the American Veterinary Medical Association
(AVMA) Vaccine-Associated Feline Sarcoma Task Force initiated several
studies to find out why 160,000 cats each year in the USA develop
terminal cancer at their vaccine injection sites.(3) The fact that cats can
get vaccine-induced cancer has been acknowledged by veterinary bodies
around the world, and even the British Government acknowledged it
through its Working Group charged with the task of looking into canine
and feline vaccines(4) following pressure from Canine Health Concern.
What do you imagine was the advice of the AVMA Task Force, veterinary
bodies and governments? "Carry on vaccinating until we find out why
vaccines are killing cats, and which cats are most likely to die."   

In America, in an attempt to mitigate the problem, they're vaccinating
cats in the tail or leg so they can amputate when cancer appears. Great
advice if it's not your cat amongst the hundreds of thousands on the
"oops" list.   But other species are okay - right? Wrong. In August 2003,
the Journal of Veterinary Medicine carried an Italian study which showed
that dogs also develop vaccine-induced cancers at their injection sites.(5)
We already know that vaccine-site cancer is a possible sequel to human
vaccines, too, since the Salk polio vaccine was said to carry a monkey
retrovirus (from cultivating the vaccine on monkey organs) that produces
inheritable cancer. The monkey retrovirus SV40 keeps turning up in human
cancer sites.   

It is also widely acknowledged that vaccines can cause a fast-acting,
usually fatal, disease called
autoimmune haemolytic anaemia (AIHA).
Without treatment, and frequently with treatment, individuals can die in
agony within a matter of days. Merck, itself a multinational vaccine
manufacturer, states in The Merck Manual of Diagnosis and Therapy that
autoimmune haemolytic anaemia may be caused by modified live-virus
vaccines, as do Tizard's Veterinary Immunology (4th edition) and the
Journal of Veterinary Internal Medicine.(6) The British Government's
Working Group, despite being staffed by vaccine-industry consultants who
say they are independent, also acknowledged this fact. However, no one
warns the pet owners before their animals are subjected to an
unnecessary booster, and very few owners are told why after their pets
die of AIHA.

Point to Ponder #7 -- Do Americans Really Need

According to the National Center for Health Statistics, only nine percent of
all American adults consume enough healthy foods to reach their
minimum recommended daily intake of nutrients to assure proper health.  
In other words, 90% of American adults lack essential nutrients to stay
alive.  

Substantiating this, Johns Hopkins researchers Ames and Wakimoto show
that "suboptimal nutrient intake is a widespread problem" in the USA.  
Such nutrients include, but are not limited to, vitamin C, folic acid,
magnesium, acetyl-L-carnitine, zinc, copper, B12, essential fatty acids,
vitamin D and selenium. The importance of these nutrients demands
attention. Take heed.

A lack of nutrients results in a lack of "metabolic harmony." Metabolic
harmony can be described as the ability of your body to properly maintain
DNA function by minimizing damage to it. DNA serves as a genetic map,
continually working to guide your body to proper health. A deficiency in
any ONE nutrient can wreak havoc on DNA, thereby disrupting "metabolic
harmony."  As a result, the mechanism by which DNA directs the body to  
perfect health becomes weakened.

Point to Ponder #8 - 600 Pro's Urge Congress to Stop
Fluoridation

Citing new scientific evidence suggesting ineffectiveness and serious
health risks, more than 600 professionals are urging Congress to stop
water fluoridation until congressional hearings are conducted.

The signers include physicians, dentists, scientists, and environmentalists.

Their statement released yesterday cites a 500-page review of fluoride's
toxicology by a panel appointed by the National Research Council of the
National Academies.

The panel looked at a large body of literature in which fluoride is said to
have a statistically significant association with a wide range of adverse
effects. They include an increased risk of bone fractures, decreased
thyroid function, lowered IQ, arthritic-like conditions, dental fluorosis and,
possibly, osteosarcoma.

The signers include a Nobel Prize winner, three members of the NRC
panel, two officers in the union representing professionals at the
Environmental Protection Agency headquarters and the president of the
International Society of Doctors for the Environment.

"Fluoridation is against all principles of modern pharmacology. It's really
obsolete," contends signer Dr. Arvid Carlsson, winner of the 2000 Nobel
Prize for Medicine.

Menu of the Month - Fall Bounty
So many wonderful fruits and vegetables are at their peak at this time of
year and it will be our last chance to enjoy them fresh for perhaps many
months. To take advantage of what is available, this menu features
Ratatouille, a traditional French "harvest" vegetable mix (made with or
without sausage), cooked greens, saffron rice, and a fresh goji pear
parfait for dessert.

The ratatouille is actually very easy to make. In spite of the initial
chopping, it requires very little oversight and makes quite a pot full. Any
extra can easily be frozen for future use as a topping for noodles, grains,
baked potatoes (one of my personal favorites), braised chicken breasts or
even scrambled eggs. It can even be stuffed into a pita!

   Ratatouille in Roast Portobello Caps
                Steam-Sauteed Greens
                         Saffron Rice
                        Berry Parfait

Ratatouille -- Heat 3-4T olive oil in a stock pot. Add, one at a time and in
order allowing each to cook for a minute or two before adding next item,
the following chopped vegetables: 2 large onions, 1@ green, red & yellow
bell peppers, 4 medium zucchini, 4 large tomatoes (or canned), 8 cloves
garlic, and 2# eggplant (no need to soak). Add 1 small can tomato paste,
1/2 cup chopped parsley, about 20 fresh basil leaves torn into pieces, 1
bay leaf, 1/2 tsp dried thyme, 1T honey, NTM salt & pepper to taste, stir
and let simmer softly uncovered 30-45 minutes until vegetables are just
softened. The vegetables should be quite moist but not runny; add a bit
of broth if too dry or allow to cook a little longer to evaporate liquid if too
wet. Remove bay leaf and serve in portobello mushroom caps that have
been lightly brushed with olive oil and roasted at 400 for a few minutes
until just a bit toasty. VARIATION: add about 1/2# sweet Italian sausage
just after onions and before everything else.  

Steam Sauteed Greens -- Sauté about 2# washed and still wet
stemmed/chopped greens of choice (kale, beet, chard, dandelions, etc.) in
3T olive oil to wilt. Add a little broth if necessary, salt and pepper, and
simmer gently, covered, till cooked through. Stir in the juice of one or two
lemons. Drizzle a little more olive oil over the top and serve topped with
the mushroom cap/ratatouille.

Saffron Rice -- In your rice cooker or pot, place 2 cups broth (either
chicken or vegetable) and 2 cups water. Add 2T @ butter & minced onion,
along with a couple of pinches of saffron threads, to liquid and then add 2
cups long grain brown rice; cover and cook as usual.  

Berry Parfait -- place fresh, clean berries of choice in bottom of wine
glass; layer with real whipped cream repeating layers until glass is filled -
end with whipped cream dusted with ground toasted almonds.

glass of water and asked, "How heavy is this glass of water?"  

Answers called out ranged from 8 ounces to 20 ounces.  

The lecturer replied, "The absolute weight doesn't matter. It depends on
how long you try to hold it. If I hold it for a minute, that's not a problem.
If I hold it for an hour, I'll have an ache in my right arm. If I hold it for a
day, you'll have to call an ambulance. In each case, it's the same weight,
but the longer I hold it, the heavier it becomes."

He continued, "And that's the way it is with stress management. If we
carry our burdens all the time, sooner or later, as the burden becomes
increasingly heavy, we won't be able to carry on."

"As with the glass of water, you have to put it down for a while and rest
before holding it again. When we're refreshed, we can carry on with the
burden."

"So, before you return home tonight, put the burden of work down. Don't
carry it home. You can pick it up tomorrow. Whatever burdens you're
carrying now, let them down for a moment if you can. Relax; pick them up
later after you've rested. Life is short. Enjoy it!"

"Yesterday I was buying a large bag of Purina dog chow for Athena the
wonder dog at Wal-Mart and was about to check out.

A woman behind me asked if I had a dog. On impulse, I told her that no,
I didn't have a dog, and that I was starting the Purina Diet again.
Although I probably shouldn't, because I'd ended up in the hospital last
time, but that I'd lost 50 pounds before I awakened in an intensive care
ward with tubes coming out of most of my orifices and IVs in both arms.

I told her that it was essentially a perfect diet and that the way that it
works is to load your pants pockets with Purina nuggets and simply eat
one or two every time you feel hungry and that the food is nutritionally
complete so I was going to try it again. (I have to mention here that
practically everyone in the line was by now enthralled with my story.)

Horrified, she asked if I ended up in intensive care because the dog food
poisoned me. I told her no; I stepped off a curb to sniff an Irish Setter's
rear and a car hit us both.

I thought the guy behind her was going to have a heart attack, he was
laughing so hard!

WALMART WON'T let me shop there anymore!!!"
